Only thing about storing them in the freezer, is that they go soft and lose their "crisp" or "crunch" after being frozen. This doesn't matter if you are using them as an ingredient in a meal, or making hot sauce...but if you want to eat one fresh for a snack, or use them fresh on a sandwich for some heat and crunchy texture....they won't have that after being frozen. I started watching your show and decided to start making these dishes myself. My first recipe was the wicked cassava pone you did, it just came out the oven and it is cooling right now, and yes you were right when you said that we would be tempted to cut into it right away.

My plants are even re-flowering for a second time this year. So, I will definitely have a surplus. Was looking for difference ideas in preserving them.

I have germinated chillies from the freezer, did it just last week actually. My Jolokias died off over winter & I had some FRESH, HOMEGROWN Chillies in my freezer, I got 2 out, defrosted them and germinated the seeds in a zip lock bag with a paper towel. If you don't believe me, don't, or try it! Happy gardening!

Yes you can! You can pickle frozen vegetables the same way you would pickle any other vegetable. To pickle, you can: Place frozen vegetables in a heat-safe jar Make a brine and heat it until the salt and sugar dissolve Pour the brine over the vegetables Let it sit until it's cool to the touch, then chill in the fridge overnight
What do i do if i want to freeze my peppers during the summer and take them out in december to make hotsauce? My carolina reaper plants just had their first peppers turn red and i only have 6 that i picked. I am waiting for 2 more to ripen and others are starting to grow and they all finaly have tails on them.
One plant isn't as tall or has as many blooming flowers as the other has 2-3 peppers starting to grow and the tallest one has about 7-10 peppers growing on it right now and there are about 15-20 flowers blooming and the numbers increase with each passing day.
I have a few pepper plants. I get way more than I use. I just dry them in the oven at 60c for a couple hours till they are tiny shriveled up nubs. I then put these into a jar and fill with vinegar. Chuck em i the fridge Few months later when I run out of hot sauce, I grab bottle full of peppers, empty contents, whiz it into a fine paste, maybe add some more vinegar to make it more a sauce than a paste. Best hot sauce ever. My question. The initial drying of the pepper in the oven. Would this reduce the peppers flavour/hottness? My sauce it very hot as it is, just to my liking, few spoonfuls in any dish really gives it a kick. Just really interesting to see if drying a pepper reduces its potency. Thanks!

I’m in Ohio. A local garden center had scotch bonnet plants this spring. I’m growing them in pots on the patio. So far no insects or critters have bothered them, so I haven’t needed to spray poison on them.

I learned that peppers don't have to be blanched for freezing, but sources I've seen so far also said to chop the peppers, which evidently is just a matter of choice. It's good to know that the peppers can be frozen whole. Do you by any chance know how to make cayenne spice powder from fresh cayenne, & if you don't, do you know of any recommendable Web resources that would provide this info?
+sidka84 Whole with seeds and stems if it's still on. Wash and put in zip-locked bags as is stated here. The stems make a good handle when you are cutting it. Unlike Chris, I find it easier to cut them while they are still frozen and hard. They are a bit soggy when thawed. I hope this helps. :)

+William Lee I found Scotch bonnet plants for the first time this spring at Mahoney's Garden center, from Uncle Mike's Organics. They were a little pricey, however they have been producing since July. I am also South of bean town but you should be able to grow them there as well.

Drying them does not affect the heat, in my experience. We dried (in a dehydrator -- I would be wary of using too much heat, but you could probably do them in a low oven, but it takes a while) a bumper crop of habs and then ground them like a crushed red pepper -- use sparingly!
What are the Scotch ... peppers you mention at the start of this video? I wasn't able to understand the whole name for those. And, man, you sure like your peppers hot. According to the wikipedia page for "Habanero chili", these peppers "are rated 100,000-350,000 on the Scoville scale", while another wikipedia page, for "List of Capsicum cultivars", says cayenne is 30,000-50,000, & I think that's hot enough for me, thanks. I'll have to get used to more cayenne before moving to stronger.
After freezing, when they thaw, they are wet and the seeds inside are rotted. Maybe not a good idea to freeze. Buy what you need and use them fairly soon.

I have been storing hot peppers in the freezer for up to four/five years sometimes. They are still fresh and I swear they get hotter when frozen. LOL

Will freezing kill the seeds?
Yes. Freezing causes seed germination rate to move close to zero. If you save seed, do this first from fully ripe (red) peppers.
the green one are just as good as the yellow and reds, the red and yellows ones tend to be a bit softer then the green ones

2 pounds of chillis cost $30 here in Australia and they are only common chillis not theeven in the top 6 hot chillis

According to the wikipedia page for "Habanero chili", these peppers "are rated 100,000-350,000 on the Scoville scale", while another wikipedia page, for "List of Capsicum cultivars", says cayenne is 30,000-50,000, & I think that's hot enough for me, thanks. I'll have to get used to more cayenne before moving to stronger.

My only question is... Will they lose any of their heat??? If using them in hot sauce that would make a difference.

After freezing, when they thaw, they are wet and the seeds inside are rotted. Maybe not a good idea to freeze. Buy what you need and use them fairly soon.
