    Malai Boti Handi:
    Ingredients for chicken marination:
    Chicken (boneless cubes) 500 gram
    Ginger garlic paste 1 tbsp
    Meat tenderizer 1-1/2 tsp
    Salt 1 tsp
    Green chilies (blended) 1 tbsp
    White cumin 1 tsp
    Yogurt 4 tbsp
    Cream 2 tbsp
    Coal 1 piece
    Oil 2 tbsp
    Ingredients for gravy:
    Blended onion 1
    Yogurt ½ cup
    Ginger garlic paste 1 tbsp
    Salt to taste
    White pepper ¾ tsp
    Cream 4-5 tbsp
    Milk ½ cup
    Oil ½ cup
    Ingredients for garnish:
    Onion (cubed) as required
    Capsicum (cubed) as required
    Green chilies (cut lengthwise) as required
    Butter 2 tbsp
    Method
    Except coal put all ingredients in chicken and leave for 2 hours. Now grill it and give coal smoke. Then heat oil add blended onion, ginger garlic paste, salt, white pepper and yogurt and saute well. Now add cream and milk. When boil comes then add grill chicken and let it simmer for 5 minutes. Then fry onion, green chili and capsicum in butter and put in handi and serve.
    Chapli Kabab Roll:
    Ingredients:
    Chapli Kabab 1 packet
    Parathay 4
    Oil as required
    Ketchup as required
    Tomato, cucumber, onion, lettuce leave as required
    For chutney:
    Green coriander ½ cup
    Green chili 2-3 tsp
    Salt ¾ tsp
    Tamarind paste 2 tbsp
    White cumin 1 tsp
    For salad:
    Finely cut cabbage 1 cup
    Mayonnaise ½ cup
    Lemon juice 1 tbsp
    Method:
    Heat oil in pan fry the patty. For chantey all ingredients mix and grind it .after this add salad ingredients mix .now toast parthay with oil .Spread the kabab pieces, ketchup ,tomato ,cucumber ,onion ,lettuce leave and ready chutney roll and serve with chutney.
    Channay ki daal lokhi:
    Ingredients:
    Bottle gourd ½ kg
    Boiled gram lentil 2 cups
    Chopped tomatoes 2
    White cumin ½ tsp
    Nigella sativa 2 pinch
    Fennel seeds ¾ tsp
    Salt to taste
    Red chili powder to taste
    Turmeric to taste
    Mix whole spices as required
    All spice powder ½ tsp
    Oil ¾ cup
    Finely cut green chilies 2-3
    Mint 2 tbsp
    Method:
    Peel the bottle gourd and cut it .then heat oil and fry onion .now add white cumin,boiled chopped tomatoes ,salt ,red chili powder and turmeric and roast well .then add bottle gourd and roast masala .after this add ½ cup of water and cook .when half done then add gram lentils ,Nigella sativa and fennel seeds then leave on dum . When bottle gourd tender then add all spices , green chili and mint mix and serve .
