I am testing this information with a cgm, and so far it bears out. I tested boiled potatoes with all the toppings, there was a rise in glucose of 2.2 mmol. Six hours later, 1 cup of potato chips, there was a rise in glucose of 3.7 mmol approx. So boiled potatoes with butter, cheese, sour cream, and chopped onion caused less reaction than a cup of potato chips. The rise with the potato chips was very quick compared to the loaded potatoes.
Everyone will have different reactions to different foods, for me, it's worth the time and money to figure this out.
Thanks for all you are doing! I really appreciate your insights:)

A sudden rise and quick drop in insulin is NOT true reason potato chips are destroying the body. Fruit and honey will raise your glucose quickly and it will come down quickly. But people don’t become diabetic just because there’s insulin spikes. By definition, you insulin rising quickly and then your body being able to bring it back down quickly is quite literally the definition of insulin sensitivity. Just wanted to point this out in case this was the point you were making, namely, that insulin resistance is caused by insulin spikes throughout the day

It’s almost impossible to find any packaged food without it, even keto foods at Whole Foods. One really has to cook most of their food at home. I eat at a few places, I’m not afraid of a little here and there as I like to go out and be social, but careful what I eat to get as little as possible. It’s fascinating how strict states are with vaping (fine) but by all means freely stock the schools and promote and allow teens to eat as many Cheetos and pop tarts, no restrictions, no nicotine but creating a future of sick, obese kids with fat livers and low test scores - future work force.

I had to post this here: i just found hidden seed oils in……. Butter.
I was shopping at a store i rarely go to and the best butter i could find was from Lurpak, and it said made from 100% organic ingredients.
I cooked some whole eggs in it as i usually do, about 5 eggs. As i was cooking i saw that the pan was smoking more than usual but did not think twice.
I had my meal (which tasted funny) and at the end i wanted to have a few scoops of just the butter.
I took one scoop and the taste was odd again, when i look more closely, they actually sold me a mix of spreadable fat, containing 70% organic butter and 30% organic….. CANOLA OIL.
I’m so pissed, and also not feeling very great.

Thank you for spreading this information. From my experience, I think long term consumption of seed oils clogs the biliary tree ducts. Especially when consumed (unknowingly) from a young age. This in turn causes inflammation and inability to digest other foods correctly. My doctor wants to remove gallbladder, which I am against. (blood tests ok, no visible stones, but nonstop bloating and right upper quadrant pain). I have never been overweight, but have eaten a lot of seed oils throughout life. Now taking Urosidiol (UDCA bile salts) for the next 1.5 years, and eliminating seed oils in attempt to remedy the situation.

To be said I don’t eat these products myself, I just make them. One other year student came and was excited we made these buns, she asked what’s inside and I said beef minced meat. She said-I have eaten those like 7 this week ( or something if I remember right). She added, I usually don’t eat red meat but this time I can’t resist these buns. I assume that with out red meat these buns would be totally accepted by her being fried on very high heat inside the canola oil. The palm oil that is being referenced, is it refined or unrefined. I'm thinking it's probably the former because unrefined palm oil has a strong flavour and taste that wouldn't go well in muffins. I'm from Nigeria and we traditionally use a lot of unrefined palm oil and seemed to do well on it until the introduction of seed oils.

You joke about having an allergy to seed oils, but I think I might have developed just that. Every time I eat junk with seed oils, my blood pressure skyrockets and I can't sleep, and the next few days I'm fatigued constantly. Just a few days without any of them and everything goes back to normal. The only thing I can think to explain this is a pretty severe inflammatory response, just like anyone with an allergy would experience.

    Fascinating! But really sad.
This is likely why people aren’t successful to lose body fat when even on a Carnivore Diet, because the fat is higher in linoleic acid than it should be in nature.
So what is the best way to eat to circumvent this problem?
    Could you address this?
    Use an Air Fryer?
Would an LDL-P be better than LDL-C ?

Hey Paul, I'm still having trouble with my belly fat. I'm 15 and have had it since I was young, in the past 6 months i've reconstructured my diet, more meat, more fruit, f*ck vegetables, diary. No sugar apart from fruit and hardly any if none processed foods. I've also being going to the gym almost everyday doing a high weight intense workout, ive noticed a huge difference in muscle, but my belly won't go away, it's still as big as it's always being and it causes me problems like; Back problems and extra fat weight I don't want + makes me look less attractive. Any ideas?

Can you share the paper on palm oil on what makes it bad. I live in Tanzania where Malaysians got the seeds for oil palms. In the Kigoma region where they predominantly ate palm oil and were very healthy without any cases of obesity or heart diseases before these other oils came and started to have these obesity and heart disease issues. We used to eat palm oil fruits as kids like whole day and had no issues whatsoever. Look populations like Nigeria when they used to cook with palm oil only when they were the world leaders in palm oil production - they never had heart issues than they have now that they use many of these other oils. Let's look at Singapore and Malaysia, these are leading producers of palm oil world over and they use plenty of it - do they have higher heart attacks issues than US population? If not why? And these are eating processed palm oil not the red palm oil which is much healthier.
