    Ingredients :
    Preparation For Rice :
    1½ cup - Basmati Rice (Soaked 10 Minutes)
    After 10 minutes drain the rice and keep it aside
    For Making Mushroom Biryani :
    2 tbsp - Ghee
    ½ tsp - Shahi Jeera (Cumin)
    ½ tsp - Fennel Seeds
    3 - Cloves
    1 inch - Cinnamon
    3 - Green Cardamom
    1 - Star Anise
    1 - Strand Mace (Optional)
    1 - Bay Leaf
    ½ tsp - Stone Flower
    12 - Cashews Cut In Half (Optional)
    ½ tbsp - Grated Ginger Garlic
    1 tsp - Chopped Green Chili (As Needed)
    ½ cup - Slice Onion
    ¼ tsp - Turmeric
    1 tsp - Red Chili Powder
    1 tsp - Coriander Powder
    1 tsp - Biryani Masala (Garam Masala)
    ¼ tsp - Black Pepper Powder
    ½ cup - Chopped Tomatoes
    1½ tsp - Salt (As Needed)
    2½ cups (220 to 250 grams) - Mushrooms Sliced (Chopped)
    ½ cup - Yogurt (Dahi)
    2 tbsp - Chopped Coriander Leaves
    3 tbsp - Chopped Mint Leaves
    1½ cup - Basmati Rice (Soaked 10 Minutes)
    Pinch Of Saffron (Optional)
    Add 1¾ cup water
    3 - Sliced Green Chilies (As Needed)
    2 tbsp - Chopped Coriander Leaves
    3 tbsp - Chopped Mint Leaves
    Directions :
    For Making Mushroom Biryani :
    On a medium heated pressure cooker add, 2 tbsp ghee
    Add ½ tsp shahi jeera
    Add ½ tsp fennel seeds
    Add 3 cloves
    Add 1 inch cinnamon
    Add 3 green cardamom
    Add 1 star anise
    Add 1 strand mace (optional)
    Add 1 bay leaf
    Add ½ tsp stone flower
    Add 12 cashews cut in half (optional)
    Add ½ tbsp grated ginger garlic
    Add 1 tsp chopped green chili (as needed)
    Saute for a few seconds
    Add ½ cup thinly slice onion
    Saute until golden
    Add ¼ tsp turmeric
    Add 1 tsp red chili powder
    Add 1 tsp coriander powder
    Add 1 tsp biryani masala (garam masala)
    Add ¼ tsp black pepper powder
    Saute for a few seconds
    Add ½ cup chopped tomatoes
    Add 1½ tsp salt
    Saute until the tomato becomes soft
    Add 2½ cups (220 to 250 grams) mushrooms sliced (chopped)
    Add ½ cup yogurt (dahi)
    Add 2 tbsp chopped coriander leaves
    Add 3 tbsp chopped mint leaves
    Saute for a 6-8 minutes
    Add 1½ cup basmati rice (soaked 10 minutes)
    Add pinch of saffron (optional)
    Mix well
    Add 1¾ cup water
    Mix well
    Add 3 sliced green chilies (as needed)
    Add 2 tbsp chopped coriander leaves
    Add 3 tbsp chopped mint leaves
    Close the lid
    Pressure cook on a medium-high flame for 1 whistle
    When pressure release, open the lid
    Gently mix the Mushroom Biryani
    Remove the Mushroom Biryani in a plate
    Mushroom Biryani is ready to serve
