With the 12 and 13 series I find it easier to keep the frame, and try to carefully tuck a really thin plastic sheet between the glass and the display, and separate it with a wire using the guidence of the plastic sheet. Granted, it works better (obviously) on a not so damaged glass, but it's doable. That way you save 2 additional steps like separating the frame, and reapplying a new 1. And you can laminate it on a double foam plate. Perfect results every time.

And keep in mind Apple doesn't like anyone repairing their phones but Apple, so if it detects parts that aren't genuine Apple, the phone won't work properly.
Aftermarket screens will function perfectly but a notification will appear. This doesn't change the OLED so the notification doesn't appear at all. You can also swap the IC chip from the original screen to the aftermarket screen to get rid of that notification if it bothers your clients.

What lamination settings do use for in-frame laminating ?

Why did you not keep the frame on when cutting the OLED? Is it because of the large number of cracks?
