I would pick the window area that you can see out of for your knitting zone. I like a drop down table idea for your cutting table. When not in use, it folds back up and clips in place on the wall. This doesn't take up valuable floor space. As for shelves, I love the Kallax 8 cubbie bookcase/shelveunit from Ikea. I put my Kallax on wheels, so portability is enabled. I have been known to turn my Kallax on it's side still with wheels and push that up against say something like your kneewall area. I do put a peg board backing on it or when in a rush cardboard or kraft paper roll works well too. A swivel chair might be an idea so depending on if you want to face the light or have the light at your back - options. Task lighting up or targeted? I'll leave you now with those thoughts to mull over.
Thoughts about yarn storage: A)It can be on a no-outlet wall space, in good light but not direct sunlight; B) The pegboard with cakes would look nice, but then requires you to cake any new yarn purchases or risk piles building; C) I think you like the crates over the Ikea unit because the crates can be “creatively” stacked.

I love my cutting table...I do mostly rotary cutting. At the time I was doing my studio, someone advised me as to a goo height for the table, which was higher than I would have gone. I'm 5'5", and the table is 36.5" tall, it's great and I've never had back strains using it. As for caking your yarn and putting it on a peg board...I vote no. I've heard not to cake your yarn until you're ready to use it in a project, or else it may become stretched. I do have a peg board for all my tools, etc., for my work and it's great (I'm a longarm quilter) I don't think I knew you were a runner! I call myself an accidental runner...started in 2016 at age 56. In 2018 I was in Nova Scotia and ran a race in Cole Harbour ( I think it was 🤔). I haven't run this past year due to foot problems and lack of motivation. This week I have my final round of cortisone shots in my feet, and I hope to get moving again. I'd really like to be able to run/walk a 5k race down in Hamilton with my son in November 🤞🏃🏃♀️
The Possum yarn from NZ is not ethically sourced. It is cruel and painful. Possums are considered a pest in NZ and they are either trapped in old fashioned metal traps or poison baited. So the yarn carries that pain with it. Please do research on yarns used and promoted.

IKEA storage systems are great and their tables are so adjustable. What about built-in for the low roof area for skeins?
I love the idea of built-ins …. I may just have to make my way to Halifax to IKEA!
