It is a great technique. I needed to do something similar but with more complex poligonage instead of splines and thanks to your technique I have managed to do it and animating it is very simple and super realistic.
For models other than splines , you have to use bones. but if you plan ahead you can avoid it and use this spline technique, but yes other than spline > go for the bones. thanks for your support.

there a modifier called spline ik for spline
Though Spline IK is useful , but they are not as flexible as this technique. Check for yourself.

I doubt that rig will work on the exported model in unity. I never tried though but the controllers might not export as controller.
