    Really tired of all the negative things people post. If it doesn't sound good to you, don't make it and stop making comments about it until you have tasted it. I love it and it tastes like the mole I had in Mexico. Delicious! Thanks for another great recipe, Jeff.

    Toasting the sesame seeds in a dry skillet or spread out on a baking sheet in an oven.... makes them taste so much better and improves their flavor.

    Mole sauce varies by region and even by someone’s family recipe. This is “Jeffrey’s Mole Sauce”. I can’t remember how many Mexican restaurants I’ve been to where the menu says that what Americans think of as chocolate is not what goes into an authentic mole sauce. But really, who cares? If it tastes good, that’s what matters. But I wouldn’t expect many Mexicans would taste this recipe and say, “That’s just like grandma used to make.”

    Interesting take on mole my friend, I made the recipe tonight and the family loved it. Thank you so much for sharing! I substituted white wine for the water and used boneless chicken thighs. Came out great!!!

    The cinnamon makes it a Oaxacan mole. That's what sets Oaxacan chocolate apart is the liberal cinnamon within. My wife talked a grandmother in Oaxaca into showing her how to make the family mole (no idea how she managed to do that). It's amazing mole. Good job using an instant pot to do it.

    That looks beautiful and yummilicious. Gave me ideas of how to do my mom's mole in the InstaPot. We use pumpkin seeds rather than peanut butter or peanuts. The sauce makes all the difference. Thank you!!

    This is not mole. Mole is made with different kind of dry chillis and no tomato sauces.

    Mole (from Nahuatl molli or mulli) refers to various types of MEXICAN" (not from Spain, for that of Olé!) sauces made primarily from chili peppers and spices.

    I love all of your recipes and I'm sure this one is delicious, but this is not the mole that I grew up with. That one used turkey not chicken and pumpkin seeds, unsweetened chocolate and chiles, etc. It's smooth and dark. I imagine this is tasty and after all, what is cooking if not fluid, but you should look up a traditional mole. Thanks for all your work on these - Love the InstaPot and you've been a huge inspiration!

      Thanks for your comment and lovely words! But I do want to be clear I never claimed this was a traditional mole, just my version. Just like no two Jewish briskets are the exact same in Jewish households, the same goes with mole in Mexican households and restaurants. No two moles are ever made the exact same way. But if the if end result TASTES like the dish should taste, that’s all that matters.

    That looks delicious. I might drag out my instant pot and try it. My friends have made it and I love it! You can buy the sauce in a jar too. It's very hot here now, too hot to turn on the oven (mine has cobwebs in it 😊), but not too hot for the instant pot. Can you use the snap finger thing to wash dishes?

    I think this mole is more American than Mexican, because the only ingredients that were right were the chocolate and sesame seeds. But either way I’m going to try it to see if it better than Mexican mole

    I am sure this is good but it is not Mexican chicken mole. The same mistakes here are the same used in many north of the border Mexican recipes. Here are some clues: Mole means sauce and there are other types of mole. NO tomatoes or garlic, please. We are old school. And, 1/2 Tbsp. of chile powder? When I am in a hurry and because we are old, I use mild chile powder (about 6 Tbsp. to 6 cups of broth, but dried chiles are best but a lot of work.) Some states you can get mild chile powder at your grocery store or online. There is no sham in using chile powder. Or, look for Maria brand mole online. It is very authentic. and easy to make. No tomato products of any kind are used in any Mexican cooking except for salsa or pico de gallo. Not all Mexicans like spicy hot food either. Also, every family has their own version, some with 23 or more ingredients like peanut butter (but, you can leave it out because some are allergic of course) and pepitas and Abuela chocolate like my husband's mom. Hubby doesn't like his too sweet but I like a little agave in mine and he like thighs and I like breasts. You can use as few as 10 ingredients for the mole and it will still be good. BTW, "Chile" is the pepper and "chili" is a colorado (red) stew.

      You can make your own version of Ro-Tel if you can find a can of diced tomatoes and a can of green chilies. Usually the green chilies are in small cans ...so you might want to add two cans of green chilies to one can of diced tomatoes.

    I made this tonight. O. M. Gosh. It is insanely good. The only thing I did differently was to use my little bit of left over bone broth in place of the broth you used and I used breasts. This is hands down the BEST. Mole sauce ever. Thank you! I REALLY enjoy your channel!!

    I have to admit that I'm curious about this. Chocolate and peanut butter in a sauce? I live in Texas so I've had my fair share of Tex-Mex and I've heard of Mole, but I've never tired it.

      Use the MILD CHILI Powder spice. You'll find the Mole has just a slight touch of heat... but not objectionable.

      When I go out to eat, mole is usually dark meat. But it came with a breast one time.
      I've seen people cut the breast in two, for even cooking.

    Don't mean to sound rude, but that is not mole. You might want to try hanging out with some Mexicans that know how to make mole. You didn't even use any dried peppers such as guajillo. It was actually quite funny to watch this. It might taste good to you, but don't call that mole. Sorry bud. Not even close.

      Although raw chicken and turkey can carry bacteria on their surfaces, research has shown that washing raw poultry under running water in yourkitchen sink is a bad idea. ... The heat from the cooking process will kill any bacteria that are present.
