  • Bacon and Cheese Puffs
    Ingredients:
    bacon - 6 oz (170 g)
    cheese (Mozzarella, shredded) - 4 oz (114 g)
    sun-dried tomatoes - 3 halves in oil (drained, sliced)
    chives - 1 bunch
    puff pastry - 1 sheet
    for brushing:
    egg yolk - 1
    Steps:
    1. Shred Mozzarella.
    2. Chop chives and bacon.
    3. Fry sliced bacon for 2 minutes (medium heat).
    4. Take parchment paper (baking sheet) and one sheet of puff pastry. Flatten it. Divide it in 9 squares.
    5. Distribute evenly sliced sun-dried tomatoes, bacon, chives, and Mozzarella.
    6. Take two opposite corners of the puff square, fold and press down to seal.
    7. Brush the puffs with egg yolk.
    8. Preheat the oven to 350°F (180°C). Bake for 15-20 minutes. Final 5 minutes keep a close eye to prevent overbaking.
