      1. Cut the eggplant into cubes and soak them in a diluted salt water solution to prevent browning and soften the eggplant. Then, remove, rinse thoroughly, and drain.
      2. Cut the pork into bite-sized pieces.
      3. Cut the tofu into cubes and fry briefly, then do the same with the eggplant.
      4. Heat oil in a pan, add the pork and cook until browned, then add chopped shallots and garlic and sauté until fragrant.
      5. Add tomatoes and stir-fry with the pork.
      6. Add the eggplant to the pan and stir-fry for about 2-3 minutes until the eggplant starts to soften.
      7. Add the tofu and mix well.
      8. Season with fish sauce, oyster sauce, seasoning powder, fermented rice, and pepper. Stir to combine.
      9. Add water, bring to a boil, then simmer for about 15-20 minutes until the eggplant and tofu are tender and absorb the flavors.
      10. Chop green onions and perilla leaves, add them to the dish to enhance the flavor, and serve in a bowl to enjoy.
