The reason why the catfish tasted disgusting is because you took the skinner side so it’s gonna be more fishy. I have eaten 40lbs + catfish and always pick the thicker/whiter chunks so it tastes less fishy. No hate tho just advice
Here's what I do for big catfish. Soak meat a few hours or overnight in milk or saltwater. Broil it on high for 15-20 minutes. It'll make the fat meat and blood line come to the surface. Pick the fat and bloodline out and keep the good meat.
Flair definitely take the rest of the catfish and soak the meat in some butter milk in the fridge overnight and then rinse the butter milk off with cold tap water and then bread it up and I guarantee you that the butter milk will take the fishy and mud water taste away from the taste of the meat!!! You definitely should try it and then maybe you won’t be mad for wasting the meat!!!
It would be cool if you stalked your pond with some of the Bass, catfish and bluegill from this pond. After all, if the owner does not want them and there's only so many you can eat...

If you want big clunker bass in a smaller lake like that you need solid & jointed smaller rapala minnow lures with as much gold on them as you can find. That's is what they are eating mostly any how. CRAPPIE MINNOWS ! Pike too.

Large catfish can still be eaters you just have to prep them right the fillets have to soak in an ice bath for starters which will clean as you put it swampy flavor out of it
Next time you cook a big catfish let it soak in a mixture of lemon juice, vinegar and water for about 30 minutes the cook it and that will help neutralize the fishy/muddy taste

TBH y'all didn't give the catfish due service. Catfish need to be purged meaning keeping them alive in water and aerator for a couple of days-a week to allow them to purge all the "dirty" taste out of them. That's why farm raised catfish are raised in hard clay bottom ponds or concrete ponds to keep the "dirty" taste out of them. I catch catfish all the time in the California delta and they always come home to be purged for a minimum of a week.
