Soft and Moist Cake without Baking Powder or Baking Soda?!! Yes! You read that right!

  • Recipe for Genoise Au Chocolat:
    Clarified Butter: 3 Tbsp
    Cocoa Powder : 1/3rd Cup
    Hot Water : 1/4th Cup
    Eggs : 5 Large
    Sugar : 1/2 Cup
    Vanilla : 2 tsp
    Flour : 3/4th Cup
    - Mix the Cocoa with hot water and make a smooth paste. Now add the vanilla and keep it aside.
    - On a double boiler put the eggs and sugar on a low flame and mix till the sugar dissolves. Don't cook the eggs.
    - Pour the egg and sugar mixture in another bowl and whip it for 5mins. The mixture will triple in volume by now.
    - Now add the clarified butter and fold it in.
    - Add the cocoa mixture and fold it in. Be quick as the egg foam might deflate.
    - Add the Flour and make sure there are no lumps.
    - Pour in the prepared tins and bake it for 30mins at 180°c.
