Writing down the recipe to try it out later :) ➤ CARAMEL 80g sugar + 2 tbsp water (room temp) heat over low heat swirl pot to make sure it is evenly melting after it reaches desired colour add 2tbsp of hot water (will sputter so be careful) then partition into 4 moulds (4 x 1.5tbsp) cool for 10-15 mins ➤ CUSTARD 2 large eggs 1tsp vanilla extract whisk until smooth (don't try to beat air into it) and then set aside in a pot put 2x thai milk tea bags add 40g hot water set aside to steep pour into the tea 130g evaporated milk 76g condensed milk 400g full fat milk heat over low flame till small bubbles appear on the side occasionally stir and gently press on tea bags to extract flavour once tiny bubbles appear on surface (and looks more foamy) turn off heat as you don't want to boil mixture slowly pour warm mixture into eggs to temper then strain to ensure smoothness ============== preheat oven to 150C pour custard evenly amongst 4 ramekins sit for 10mins to allow bubbles to rise pop any if you want (optional) tightly cover mould with foil on top place moulds in tray fill tray with hot water until it reaches half height of mould bake for 35-40mins pudding is ready when edges are set but the middle still has a wobble cover pudding and let cool at room temp for 30mins before refrigerating overnight

I used condensed soymilk and evaporated soymilk and coconut creamer instead of the milk products (because I'm lactose intolerant) and it still worked perfectly!! I also used the thai tea bags sold at walmart. One mistake I made was letting the tea bag burst 😣 I thought it would strain out easily, but the tea leaves are too fine! So I had to do a ton of extra work straining. But it was worth it because it's absolutely delicious 😀
Made some, though the texture ended up being off with mine (probably my own fault) it ended up being absolutely delicious! The tea flavor comes out a lot more than you would expect, and it really does do wonders for the whole thing.
I'm really impressed by this method to add tea flavour. We have our own unique tea flavours in my country (Rooibos and Honeybush along with a few other weird ones), and I think I will experiment with it. Also coffee and cacao should be interesting.

Pedro Salvador Thai tea is like spiced black tea with sugar and milk. Chai tea is similar, or if you can't find that then plain black tea can work.
