How to Make Pieng Gai (Lao Grilled Chicken)

    Ingredients:
    6 Chicken Thighs
    2 Stalks of Lemon Grass
    4 Heads of Garlic (30-40 Cloves, Peeled)
    8 Coriander Roots
    2 Tbsp Black Pepper
    2 Tbsp Sugar
    1 Tbsp Fish Sauce
    4 Tbsp Soy Sauce
    1 Tbsp Sweet Dark Soy Sauce
    1/2 Cup Water
    Directions:
    Chop your lemon grass into small pieces, add it into your mortar
    Grind the lemon grass as much as you can then add your garlic
    Continue to grind these ingredients until the are mashed completely
    Now add your black pepper, sugar, fish sauce, soy sauce, dark soy sauce and water
    Continue to grind together
    Add and massage the marinade into your chicken
    Cover with plastic wrap and keep in your fridge for at least 2 hours
    Grill your chicken on the BBQ or you can cook in the oven.

    I miss your videos. I still look up this video to make this chicken about twice a month. Making it now! Peeling four heads of garlic is not fun but is so worth it

      Julia A2LA I’m not sure they are sold on there own. We just buy the whole
      thing (coriander/cilantro) and then cut the roots off to use.

    Sorry, another tip. Never grill anything until you've brought the meat or item you are grilling up to room temp, so always always take out of fridge and let sit outside for 30-60 minutes, depending on meat, so as to allow even cooking and ensure meat is properly cooked. 😊

      Try grilling it indirect heat and leave for 30 minutes skin up another 15 skin down. No need to stand in front of the grill.
