    I love your videos I know that you make a lot of sauce in bulk have you every thought about after you make your sauces to preserve them by using pressure canner to make them shelf stable instead of storing them under refrigeration I do a lot canning and that would make it a lot easier for to keep your sauces the ball blue book guide to preserving I hope this will help

    Thank for sharing. I tried to make it before. I didn’t put that much tamarind like yours. I found that the stinkiest part is crap paste, I made it inside the house, after couple days, there was still unpleasant smell around , attracted flies. That’s how strong smell crap paste could’ve.

    I am currently in Thailand near the Savannakhet border. To do a visa run in Laos and always wondered how Thailand som tam laos always differed from laos som tam. Now I know, I will give your recipe a try if I can find the fish and crab paste or the viet pickled soft shell crabs. If I can I will be making this in Isaan Thailand.

    How long I can keep these bottle in fridge and if I put that bottle in fridge, it's cold then do I need cook that sause again before I put into papaya salad

      Thanks for watching! It's a fermented sauce so the life shelf is very long, especially if it's refrigerated... I have some that's been in sitting in the fridge for 2 years and it still tastes good! Just use it straight from the bottle, there's no need to reheat it! 🙂

      @@keokhon6886 as for the crab meat substitution, it won't work! But if you can't find the crab paste you don't have to add it to the recipe. It just won't be dark in color. Have you tried Amazon.com for ingredients you can't get at your local stores?

    Hello Kat! I love your videos and i think i ilike this version of your papaya sauce. I will try this today but i have a problem. I have bought the pantai pickled gouramy fish instead of the fish sauce in cream style. Would this do? It took me a month to find all ingridients. But im down to this fish sauce cream style.       liz Liz ... hi Liz! Thanks for watching my video and for wanting to try the recipe. Yes, you can use the pantai fish... It's basically the same thing, the jar you didn't get is just made into cream style. ** the jar you got, have bones so you will need to use a strainer before you jar it** good luck and please let me know if you like the recipe! :-)

    Ive notice a lot if other recipes put in fish sauce (nampa). Your recipe doesnt require it. Does it last longer without it nampa in it???
    If it doesnt affect anything, which bottle would you recommend?

      Gil Moua ... thanks for watching! I don't add fish sauce because my padek (Lao fermented fish sauce) is already salty same goes for the Pantai pickled fish. If I were to add the fish sauce, I would use the 3 crabs brand. :-)

      Thanks for watching! I'm no papaya expert so I totally understand what you mean. Even with this papaya sauce recipe, my tumsom sometimes tastes good, sometimes it's just all right... I think it really depends on the freshness of the green papaya, the perfect kind of ripeness of the tomatoes, the tartness of the lime and the perfect spice from the peppers! 🙂

      Lydia blake..they have a similar sauce called Ninja sauce in some Asian supermarkets here in the states. You can also order them online ranging from mild, medium to hot and they're only $5 a jar. This sauce is already made and all you have to do is add papaya and tomatoes or whatever veges you want to add. My friends have bought them and they said it's really good.

      Megan Moua ... 6 months to a year, but i have a batch that is 2 years old and still tastes good!

    Im indonesian but i eat alot of thai food. Papaya salads is one of my fav dishes but to bad i do not know how to make it. After watching ur video im thinking to trying to make ur papaya salads dressing :-) ur video help me alot. Anyway....do u have FB account or phone number i can contact u.

      Elsa&lisa ... thanks for watching! This sauce does contain a lot of sodium for people are watching their salt intake, however to me, it's not salty. It has the right amount of balance when I use it in recipes that calls for this sauce. :-)
