After flashing the bootloader you can flash the AM32 firmware. To configure AM32 and upload firmware you can use the Multi_ESC config tool using Betaflight passthrough. Alternately you can use the Online-ESC Configurator to flash or change settings with any web browser that supports web serial. I will make a video on this topic later.
One thing I don't understand is do you need to connect the stm32 programmer to voltage somewhere, or just ground. I guess it's getting power from usb, and the esc from battery so no?
The programmer is not delivering the voltage (It's getting voltage from USB). Programmer connections are Clock, Data and Ground. That's why I advise to run the laptop from battery. Power to the ESC is provided by connecting the lipo. To be a bit more safe use a smoke stopper or a fuse like I do in the video.

What AM32 Firmware have you installed?
MDK-ARM v5.xx is part of Keil MDK v6 on the official website. Installed Am32 version 2.12 last month.
And I bet the procedure is so much different for f051 that I'll never get it right, so I won't even try. Thanks anyway, hopefully I'll never need it.
