Seems like a kiritsuke would have been a natural third man in here. The length of the gyuto with the tip and cool factor of the bunka. Feels to me like the natural comparison to the gyuto is the santoku. Either way, fun video always great to see content from you guys.
Great video and to see how nice the Ryusen Bunka is working makes me ready to order it. I just ordered the Ryusen Combo Bunka and Petty from Your shop.
So I'm planning on just getting one of everything, I'm sure I'm not the only other one doing that so you should just do a video where you pick "sets" of one of every type of knife. Sets can be based on price, higher end and lower and mid range. Or sets can be based on stainless, carbon, or San Mai.
I'm a sucker for bunkas. I find their blade geometry extremely pleasing to look at and they cut just the same, besides, I don't really need (or like to use, even) a long knife, I'm fine with 6 or 7 inch knife for day to day use, as I only ever use a longer knife for raw meats, which I usually just buy, separate, and prep it all at once for the month
Gage, Great video! Was sure you were heading toward Bunka for coolness…Jake-you best be right-but Gage, you have win (imo) because I don’t have 6 bunka. Many more gyutos! Hey-do a “Hybrid shape video of knives you sell.” Please!
It's the bevels. Most bunkas have a double edge, albeit at a very acute angle. They're a general purpose cook's knife. A kiritsuke traditionally has a single edge blade. It takes a huge amount of practice to use a traditional kiritsuke proficiently. The kiritsuke-gyuto has a double edge blade. It's basically a gyuto with the profile of a kiritsuke. It's for cooks who've been trained in the western tradition of double edge knives.
One day you'll come back to this video and see this comment praising your editor for using the Final Fantasy VI font in the text overlays. Subtle, small, but wonderful.
Makes no sense to me. Honesuki is a thin knife designed to take apart poultry without breaking bones. Deba is a knife with a thick spine weighing much more than Honesuki designed to butcher large fish and break bones (of fish)
Who wears a spotify beanie? Did you get it as a gift by spotify? What for and if not, where is spotify merch sold? And who likes spotify so much that they would buy spotify merch instead of their favorite bands merch? So many questions..
Who should have won, whos next?! Let us know down below!
yanagiba vs Sujihiki
or
gokujo vs Honesuki
no matter what u say, coolness factor 100% to the bunka. the edge looks so much cooler wtf?😂
Fully agree.
I got myself a bunka as my first japanese knife two weeks ago. I'm super satisfied with it as I don't need a long knife at home.
i bought myself a kiritsuke, its an all purpose knife for me too!

Thanks John! We're going to be comparing every shape, to every other shape eventually. So keep your eyes peeled, I'm sure those will pop up soon too.
I have a kirituske, a gyuto and a bunka. My choice is mod a Nakiri with angle grinder and turn it into a bunka.:P
i bought myself a kiritsuke, its an all purpose knife for me too! its so satisfying than my gyuto, idk why...
I've got a bunka, gyoto, and santoku, and I use the bunka the most.
This chef and his company is amazing! They talked me out of an expensive knife and a better four piece set that worked better for me.
Great video and to see how nice the Ryusen Bunka is working makes me ready to order it. I just ordered the Ryusen Combo Bunka and Petty from Your shop.
How was it
Howdy, What is the Gyuto your holding for the demo?
Which specific knives are shown in this video? That gyuto looks perfect for what I'm looking for. Thanks!
What Gyuto did you display in the video there?
I know Gage that you have said you don't focus on a ton of single bevel stuff at Sharp, but a yanagiba versus sujihiki video would be pretty neat.

Can you guys do a video showing the knives you used when you cooked in restaurants
Ouuu, I really like this idea!

I just lucked out and managed to bag the BUNKA SHIZUKANA II by MAJIME. that’s one cool bunka.
I went with a Hatsukokoro Shirahama bunka as the gyuto is very similar to my German chef knife.
When are you guys having a restock of shizuku 240 gyuto?
Gage,
Great video! Was sure you were heading toward Bunka for coolness…Jake-you best be right-but Gage, you have win (imo) because I don’t have 6 bunka. Many more gyutos!
Hey-do a “Hybrid shape video of knives you sell.” Please!
Bunka vs kiritsuki next please if there is no video done yet. I feel like some makers make them alike.
Thanks for the idea! We'll get it in the pipeline!
i have a large collection and still cant find a good definition of diff between kiritsuke and bunka even though i know i have both

Which gyuto is that you are holding for most of the video?
It may be a fujimoto nashiji
I love your vids but almost always all im thinking is: ima take both xD
great video
I have nothing to add... now I want a 180-190mm tall kiritsuke with an Enso profile
IMO the bunkas are way more badass... but then, there are ktip gyotos as well, so in the end everything is badass! Both win
I got a 9.5" blade bunka with aogami super steel and a black finish. I look like a samurai cuting vegetables, it means the bunka is cooler.
iron clad yanagi vs stainless sujihiki
The gyuto looks more like a common knife, so the coolness factor HAS to go to the bunka, which is more unique looking.
Badassery is a criterion? I don't know whether to laugh or cry at this. I think the pleasure of using the knife for the job might be more apt.
gyoto is my winner. Would like to see deba vs honesuki..
Great Idea! Keep your eyes peeled for it soon!
Makes no sense to me.
Honesuki is a thin knife designed to take apart poultry without breaking bones.

@@aquaphoenixx I know the main purpose of both knives.
Deba comes in many sizes and the smaller ones can be used for many things, I own a deba.....

haha! My fiance used to work with spotify and would get merch from them often. I don't like to pay for clothing so I wear free merch often!
@@SharpKnifeShop it had to be that way😅 i mean if its cold ill slap anything on that head no matter the logo
By the way thanks for the video, convinced me to buy my first real japanese knife, a Yu Kurosaki Gyuto
Coolness? Badass?? Seriously? I'd never even think about that.
Nor do I particularly wish to look like a badass anymore than I do without a knife.
Bunka's are ultra rare to find compared to Gyutos or Santokus
K tip = cooler OBVIOUSLY 😂
No way is a gyuto cooler than a bunka !
Get both haha 😂
winner : K-Tip Gyuto
100% gyuto
Coolness factor, Bunka. Would personally never own a Gyuto. More of a Kiritsuke kinda guy.
Bunka is way cooler
Oh you know ur wrong when u say Gyuto is cooler...
hahaha! Wrong as per usual. We're getting used to being wrong.
This test should've been done with a bunka and gyuto that are both like 210mm. Gyutos are not always longer.
TLDR: K-tip gyuto
Nah, Jake is right.
Bunka is 200% cooler - Gyuto is just an attempt to look European
A European style does not make a Japanese knife "cool".
please dont hold knife like this look very dangerous
