I recently found this channel and I love it. Tiffany is so great and I love her cooking. I sure wish I could have one of her bologna sandwiches but since I live in Washington state it would be a bit of a stretch. Maybe someday.

They have their own printing press and recently did a bunch of very nice cookbooks for our fire department. They are in the coalfields of Eastern Kentucky, in an area in the Central Appalachian coal fields. Also an area beseiged by a massive flood of July 28. Another area you need to travel through.

I just found your video accidentally, you really don't know but you're a 6 million dollar woman. What your friends think about you says it all. I love listening to you tell your story of you and your dad. I know you can see him walking through the store in your mind's eye. And no one can take it from you.😇👍💐
Tiffany, a couple inexpensive kitchen tools would make this process so much easier for you. You can buy a 10" biscuit cutter so you wouldn't have to trace a bowl with a paring knife. You can also portion the filling with a disher to get the same amount every time. Then you won't have to go back and adjust the filling when some pies look short. Just a thought. I was a pastry chef for years. I admire what you do, but your time is precious when you're an owner/operator.
The R. M. Brooks store I see as a TV sitcom and it must have Tiffany she would be the heart of the show. There's humor, love, compassion. Send video's to Hallmark, Fox, etc.
There used to be a gas station down the road from us when I was growing up in Florida, back in the 60's.... you could go and get bologna, bread and a few other things and you could put it on credit, people were struggling back then too. The man was very generous and loving to do that for people living around there.
Brings back memories. My Grannie would make fried pies with peach and pear preserves that she made from trees on our land. She rolled out the crust with an old Coke bottle. Wish I had one right now.

Wonderful. We make them in the Caribbean. In Puerto Rico we call the fried pies, Pastelillo( pah•ste•lee•joe). We make them from meat,chicken, shrimp and also dessert fillings.
Hi tiff, we spanish make pastelitos, round discs to buy the disc already made. just like your. but we make them. fried pastry. Most of the time it is meat ,no pork. The dough has to be dried not moist other wise it burn because is wet

This took me back to the 60's, here in Albion. Did ya ever get the big pie dish over ya bonce for the haircut ? Shiver mi timbers, i can hear the snip snip of blunt scissors around ( sometimes IN ) mi ears. Forced to go to the "Sally Army" on a Sunday morn. Really miss home grub, but it's far more cost effective to buy from T'shop, given energy prices here. Mostly, fond memories brought back. x
Wait while Chicken Tikka pies come in, there's gonna be a 3rd republic, 7629. Tasted one, here in England in the 80's. They are "The dogs bollocks", as we say, herabouts. ( yummy )
Now I have to get to this place to try the fried pie and fried Bologna sandwich! Only other place I have tried the fried bologna sandwich at is little bar in Waldo Ohio!

Tiffany, try savory fried pies, like breakfast fried pies, your Philly cheese steak fried pies, meatloaf with gravy fried pies, spaghetti & meatballs fried pies, beef stew fried pies. Just get crazy with the fillings & I'll bet they all sell out after word gets around. And if you go all the way around the dough with the water you'll find that you'll eliminate the leakage of your fillings. You can also use a #10 can as a dough cutter for the rounds if you roll your dough out on the table instead of making the little balls. You could also flash fry them, drain the pies & freeze them & store in plastic containers until you get an order & drop them back in the grease. Hope this sparks your imagination. Have a great day 😊.
