ever since i made my first batch of homemade vanilla pudding, i never went back to boxed pudding. nothing beats pure vanilla. i usually scrape out the seed of 1/2 vanilla pod and add that instead of vanilla extract.

I kept thinking that cornstarch was only used in more simple, "easy" pudding recipes and there was a classic recipe that didn't use it (hence how I arrived here when searching for "classic vanilla pudding"). But I believe I may be thinking of custard recipes. Because EVERY pudding recipe I can find seems to use cornstarch.
@@dacypher22 That's right. There may be a confusion of terms. Some people call pudding custard and some call custard pudding; and in the UK many people call ALL desserts pudding. But strictly speaking a custard's thickening factor is the yokes, whereas a pudding takes some form of starch. For example, the lemon curd in a lemon meringue pie and the base of most ice-creams are custards.
Love this recipe Sarah.......but I would use almond milk if making this for my son, he is allergic to all dairy products. I never want to leave him left out, so I adjust my recipe's accordingly. As always, thanks for sharing.
If you were using this pudding in a classic banana pudding trifle with Vanilla wafers, would you fold in whipped cream, or use the pudding the way it is? I plan to use whipped cream as a topping, but was curious about the pudding in the base. Also, is there any difference between this pudding and vanilla pastry cream?
In other recipes, they had the egg mix separately in a bowl and poured the milk mix gently so it doesn't cook the egg. But you made everything in a pan at once, which I love cause it makes it easier, but how did you prevent the egg from cooking? Ohhh nevermind, you answered my question in the video. Thank you!
I want to use this recipe as pie filling. It's not quite stiff enough for that. How can I make it stiff enough to hold it's shape when sliced? More eggs? Gelatin? Add the whites? More corn starch?
