Trying Viral Cowboy "Caviar"!

Recipe below:
1 (15.5 oz) can black beans, drained
1 (15.5 oz) can black eyed peas, drained
1 cup diced tomatoes (or 1 14 oz can).
2 cups corn kernels
1/2 medium onion
1/2 cup chopped cilantro
1 small bell pepper, finely chipped
1 large (or 2 small) avocado
Dressing:
1/3 cup olive oil
2-3 tbsp lime juice
1/4 cup rice wine vinegar
1/2 tbsp honey
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1. Drain beans and tomato (if using canned) and combine in a large bowl.
2. Chop onion, cilantro and bell pepper and combine with beans and tomato.
3. mix in corn.
4. Mix dressing and pour over salad, mix to combine.
5. Chop avocado and place on top.
Serve with chips, and enjoy!!
Melting chocolate in a double boiler:
1. In a medium sauce pan, bring 2-3 cups of water to a boil.
2. Place chocolate in a heat-safe glads bowl.
3. When water comes to a boil, turn off the heat.
4. place the bowl with chocolate on top of the pan. The heat and steam produced will melt the chocolate. Stir consistently until just melted.
