It started well, but you lost me with the chilli... I wanted to see how fast the stove boiled water, but you were to focused on the chilli :p

Good review. Well done. Subscribed. Too much plastic in the new MSR stuff.
Island of Aruba? You lucky dog!

I have heard it doesn't turn down real well for simmering so some people are using simmer plates. What are your thoughts on it? Do you recommend any particular one? Do you know if the Whisperlight would be a better way to go when cooking rather than just boiling water? Thanks for your help.

Too much water in the chili mac, but the instructions call for too much, regardless of brand.
I've owned two predecessors to this stove: the Model G (white gas only), and the GK (any fuel you can think of. I've even heard of it being used with fermented papaya juice). I can personally vouch for these stoves and you can take one anywhere it's possible for a human to go and it will work. If you do manage to break it it's field maintainable with repair kits available.
The disadvantages: expensive, noisy, relatively complicated to operate. If you are the kind who likes to cook this stove is not for you. It's designed to do one thing and one thing only: process water, either by melting snow and/or ice or boiling it. At its lowest setting you can almost weld with it so don't even try to simmer. Yes, it is possible and I've done it, but it takes so much time fiddling with it the sun will be up before you get it right and it'll be time to hit the trail again.

Does it burn alcohol just out of curiosity?

On the box the stove comes in, it says that it will burn white gas, kerosene, and diesel. No mention is made of alcohol. My best guess would be that you could burn alcohol if you were to order a replacement main jet and drill out its aperature to a dimension 60% larger than then the jet size required for burning gasoline. Use alcohol as a preheater/primer and you should be in business. I really don't see any reason to do this. Alcohol stoves are really cheap and they don't produce heat as well as this stove as provided by MSR.
