  • SKILLET CHEESY CHICKEN, RICE & BROCCOLI || Easy Chicken Recipe
    This one-dish wonder is a perfect easy dinner on a busy night! Definitely a family favorite!
    Ingredients
    3 tablespoons extra virgin olive oil
    1 small yellow onion , diced finely
    1 1/2 pound boneless skinless chicken breasts , cut into bite sized pieces
    1/4 cup sour cream
    3 cloves of garlic , crushed
    salt and freshly ground pepper to taste
    1 cup uncooked white rice
    2 1/2 cups broccoli, cut into tiny pieces
    2 1/2 cups of low-sodium chicken broth
    2-3 cups shredded extra sharp cheddar cheese
    In a large skillet or pan, sauté onions in two tablespoons of olive oil over medium heat. Season chicken with salt and pepper.
    Once onions soften, increase the heat to medium high and add chicken to the pan.
    Brown the chicken pieces and add the garlic. Cook for about 1 more minute.
    Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.
    Add the uncooked rice in the olive oil and saute it for a couple of minutes.
    Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover the pan with a lid.
    Cook chicken and rice mixture covered for about 12 minutes.
    Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.
    Continue to cook covered another 8 minutes on low, or until broccoli and rice are both tender.
    Remove from heat and stir in sour cream in half a cup of cheese.
    Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.

    How awesome and easy! Love arroz con pollo / chicken and rice!!! Always such a classic and love it in one pot!!! Sooo easy!!! I have reinvented an enchilada casserole! I will make a video in in in a week or two!🙌🏽🌮🌯🙌🏽

      We make Arroz con pollo too, but the Colombian version which is different from the Mexican version! Both are so delicious!

    My mom makes a dish called poor mans dinner we call it this because my grandma and grandpa had 5 kids with one job in the 40s and she would mix rice cooked hamburger corn pees and cream of mushroom soup it was cheap and easy which is why she called in poor mans dinner.. it is so very yummy

    this looks great - definitely making it next week! BTW- I move my stirfry to the side of the skillet- in the same way you did - while I scramble a couple of eggs on the side. I'm always trying to sneak in protein for my kiddos. You have such a sweet countenance - love your videos:)

    I love this recipe. I'm going to try it with jasmine rice. My childhood recipe I reinvented is shepherds pie. I do it in a healthy version taste just as good without the extra calories😊💖

    My Mom used to make something similar to this but baked it in the oven instead of making it in a skillet. I like that you didn't use cream soup from a can, as my hubby really doesn't like cream soups all that much. This looks very tasty! 😋

    I'm curious if you use sour cream just to make it creamy? I'd love to try this but we have a Little one with a dairy allergy. 🤔 wondering what alternatives might work!

      Maybe make a white cream sauce?
      I don't know how to make it without dairy, but I'm sure there are plenty of recipes online.

      tyrroo I was thinking using dairy free yogurt but wasn't sure if the sour cream is for taste or just to make the dish creamy. We use coconut milk when making any sort of sauces.

      Oh, the sour cream will definitely add a lot of taste!
      I think coconut milk would be pretty gross in something like this, but I could be wrong, it could be fantastic!

      tyrroo coconut milk doesn't have an overpowering taste (IMO). Someone could probably use ricemilk or soy milk. My LO also happens to be allergic to soy as well so we couldn't do that and rice milk is extremely watery. We use coconut milk in place of dairy in most recipes 😊

      I'm late to the party but I think the sour cream is actually to make it creamy since she doesn't use any condensed soup. It would add flavour of course, but I don't think it's particular flavour is what's important. Had she used cream of mushroom it would have had a different flavour, right? I think it's probably safe to experiment with dairy free options.
