Thai Green Curry Paste:
Ingredients: Green Chillies (mix of mild and hot) - 8, Shallot - 1, Coriander stalks - a handful, Galangal - 1 inch (or 1 tsp paste), Raw turmeric - 1/2 inch, Coriander and Cumin seeds - 1 tsp each, Garlic cloves - 7, Cooking oil - 1 tbsp, Lemongrass - 1, Salt - 1 tsp, Lime peel - 1, Ground white pepper - 1/2 tsp, Citrus lime leaves - 4 to 5, Thai Basil Leaves - A handful.
Method:
Roast coriander and cumin seeds, then crush them.
Combine all ingredients, partially using a mixer for convenience and the rest in a mortar and pestle.
The vibrant green paste is ready.
For the Curry:
Ingredients: Broccoli florets, Carrots, Green and Red Peppers (1 bowl each), Coconut Milk - 800 ml.
Method:
Sauté the green curry paste in oil.
Gradually add coconut milk.
Add vegetables, and cook covered for 5-7 minutes.
Add lime leaves, Thai basil, and red pepper chilli for flavour.
Serve with rice or roti.
