One word of advice!!….make sure that when you setup the virtual switch, you get everything right the first time, including the network adapters for the VM. If you have dual NICs, allocate only one them to the virtual switch and the other to the VM host physical server. There are settings that will allow to change certain parameters in the Hyper-V settings and in the individual VM settings. These are for the most part ok to change. If you try change settings from the network adapter settings, you’re headed to destination F’d. Do not try to remove the default created Hyper-V virtual switch, do not disable the physical network adapter. Do not try and remove the Hyper-V role!….all of the actions will lead you to destination F’d and easiest fix is to just reinstall, or at least that was my experience. I was trying to swap VM switch to the other NIC and it all just went south. So…make sure during the initial setup you get it right the first time and don’t try and change anything outside of the VM setup options. ALSO, during the course of setting up the VM Host server, make sure you back it up along the way so you can recover to the various stages of configurations.

Any time you install the hyper v role on a windows server you're implementing a type 1 hyper-visor, it converts the system into two partitions host and child, meaning that the hypervisor is installed on top of the hardware
yes there is , type 1 hypervisor runs on our machine's hardware whereas, type 2 runs on the host's OS, in a virtual environment such as using vm workstations

In your video what you are pointing to as a virtual swtich is actually your virtual nic, 2nd because you are using one nic for your host managment, the box to create that management vnic that you call a vswitch should be unchecked.
your windows 10 will be host machine and then any virtual machine you create in hyper v, will use resources from your windows 10 machine. in this video he was using server with high end resources that's why it looked smooth.

Mine just installed/copy as many VMs as possible. My hardware Dell R720xd allows me to put about 30 VMs with each VM at 2vp and 2vram. You can add some GPU (Powerful Graphic Cards for gaming or technical drawings) too for the VMs. Check your PCIe slot.

Then you need a processor that supports hyper v.
Boot into your bios and see if you can enable virtualization on your processor. Some have it disabled by default.
