    Honey caramels melt in your mouth and make perfect Christmas gifts!!!
    The directions are as follows:
    1 cup Liquid Gold (Honey)
    3/4 Cup Heavy Cream
    1 1/2 teaspoon of Vanilla
    6 tablespoons of butter
    Heat and mix honey and cream in a heavy-bottomed pan on medium heat. Using an accurate thermometer heat to 275 F. As soon as the honey/cream reaches 275 F. remove from heat and then the vanilla and butter should be added. Stir all of the ingredients together well and pour into a buttered glass container. Place the caramels in a fridge to cool. We also store our candies in the refrigerator as well!

    Try some vanilla pods instead of extract, it tastes even better, you can pop the empty pod in a jar of sugar to flavour that sugar for baking or flavoured whipped cream.
    You were talking of flavours of honey, I have a couple of large lavender gardens and the smell and flavour of lavender honey is awesome, mine is pre ordered by my customers and is sold out before it is even extracted, they cant get enough of it! you can make cuttings of the lavender to build up your patches, after a couple of seasons you can have pretty large patches and when the bees have finished with them you can make pot pouri and sell that, a small sample in a mesh bag taped to the side of a jar of lavender honey makes a great gift.

    We appreciate your videos, my wife and I are Beekeepers in the northern most part of Georgia. My wife makes something very similar but we call it honey Taffy. She does the pulling and stretching thing like taffy and we wrap it like carmels in parchment paper. I like your idea of pecans and chocolate, that sounds delicious. Keep the videos coming.     Kamon, my wife and I are second year beekeepers. Last year we got just enough honey to make us want to do it again this year. Two weeks ago, we took four supers off of our two hives and got over 80# of honey. With a surplus like that, we started looking for recipes and found yours. Thanks so much. We made a double batch using your recipe today, lined the pan with buttered parchment, added some pecans and when it cooled, poured a little melted chocolate over some of them. My wife says the chocolate is a bonus, but I really like them plain. This is an easy recipe that comes out fantastic! Thanks again,

      Lol yeah I love mine too. Use it everyday for something. Helps with the cleanup too because you can make it in the jars and it’s faster with less chance of burning

    I just made a batch!! Took a little over 20 min for me to get it to come up to 275, but maybe I didn't start with the burner high enough.

    Hi. What size glass dish did you use on the video? I'm guessing it will determine the thickness of the candy. When you cut portions, is the mixture soft enough to shape?

      @@lisadurham2545 I take a sheet pan with some parchment paper on it and make a little smear of chocolate on it and place 3 pecan halves on it, then I take a small piece of caramel and flatten it out and place on the pecans, then cover in chocolate. After I make 12 turtles on the sheet pan, I place the pan of turtles in a freezer to set the chocolate. This keeps the milkfat in the chocolate from gathering on the surface of the candy.

    After the honey cools do you turn it out on the counter then cut it in order to wrap it in parchment paper?

    I’m not a good cook so this may be a stupid question. I have some crystallized honey I want to use in this recipe. Can I start with the honey as is or should I liquify it first?

      I imagine it will de crystalize as it is quick enough to work BUT I have no experience with it.

      I would think it should liquify well before it reaches the temperature for this recipe. Maybe just take it a bit slow on the warm up.

    How and when on the setup do you cut the caramels apart?

      Once they have cooled they can be rolled in parchment. If you are wanting to make the chocolate pecan caramels (like in the photo) or something similar you can pour it out right after all the ingredients have been mixed onto whatever it is you are making!

      I just don’t want to be using a hammer to break it apart if I wait too long. So I guess it depends on the end temperature heated to, if it is easier, chewier to cut/eat.

      Just cover it up and set it on the counter till it warms up. Should be able to handle it from there

    All the enzimes have been killed by the high temperature, it tastes good but you might as well use white sugar. same nutrition value after being heated that high.

      There is more to honey than just enzymes. This stuff tastes way better and different than sugar made caramel. Several reasons to make this. Honey should be used in cooking more.

      @@kamonreynolds I just tried these and you can still taste the floral notes in the honey. But I have no idea how you got it to 275 F on medium heat. I could only get it to 210 F. I turned the heat up to 8, then got scared that I’d scorch it, so I took it off and poured. Tastes great!
