How To Make Soy Milk Easily At Home (with just 2 ingredients!) for drinking AND for making tofu!

  • Making your own soy milk is super easy and super cheap! All you need is some soy beans, water, a blender, a pot to cook it in and something to strain the milk like a nut milk bag, a jelly bag, or a few layers of cheesecloth.
    When you learn how to make homemade soy milk, you can flavour it with your choice of sweetener for drinking OR use the plain soy milk to make other things like your own tofu or cultured cheese. Keep in mind that this soy milk tastes very different from most commercial brands which usually have a dozen ingredients or more. But this is so easy and super cheap to make, I hope you’ll try it.

    Makes about 5 cups
    INGREDIENTS
    1 1/4 US cups dry soy beans (200g)
    5 cups water (1200ml), plus more for soaking and rinsing
    Optional sweetener to taste (like sugar, agave, maple syrup or stevia)
    DIRECTIONS
    Soak the beans in fresh water for one or two days in a large container. Make sure there is enough room for the beans to expand to triple their size. Add water if the water level drops below the top of the beans.
    Drain the beans and transfer to a large bowl. Add enough water to completely submerge the beans.
    Rub the beans between your fingers to remove the skins. Remove the skins from the bowl by mixing the beans around and letting the beans settle to the bottom. Then skim the top to get at the loose skins. Discard the skins. Try to get most of the skins but don't worry if there are a few left.
    Drain the beans.
    Blend the beans with 5 cups of water until the beans well pureed. This took about one minute with my regular 12 speed Oster Blender on the Liquefy setting. If you have a high speed blender, take care not to over blend. You may need to work in a couple batches depending on your blender's capacity.
    Strain the liquid into a large pot using a nut milk bag, jelly bag or a few layers of cheesecloth over a colander or sieve. The liquid will be your soy milk. The pulp, known as okara, can be discarded or used in other recipes.
    Heat the milk on high heat until boiling while stirring regularly. The milk tends to form a skin at the bottom of the pot so stirring is necessary to keep this from building up. During this process, a skin may form at the top; this is normal and known as yuba. The yuba can be stirred back into the milk or skimmed off.
    Let the milk boil for a couple minutes; stir and reduce the temperature as needed to prevent the milk from bubbling over.
    Reduce the heat to medium or medium low. At this point, it's a good idea to taste the milk. It may be a bit beany tasting and bitter. As the milk is cooked, the beany and bitter taste will be reduced. Let the milk simmer for anywhere between 10 minutes to 2 hours. How long is up to you.
    When ready, strain the milk into a container.
    Serve the milk hot or cold. Add sweetener to taste. I use about 1 or 2 teaspoons of maple syrup per cup.
    NOTES
    Store your fresh soy milk in the fridge for up to 3 days. The leftover soymilk pulp (okara) will also stay fresh in the fridge for about 3 days.

    Update! Don't worry about the skins! It doesn't make much difference to the soy milk. It does keep more fiber in your leftover okara though.

      @Ranga Samy, you might have an intolerance. Sadly, if that's the case, you should probably avoid soy milk.

      Can I add some off-the-shelf perservative to make it last more than 3 days in the refrigerator (I could just freeze it, but if not that) ? I have heard probably benzyl benzoate works ok. Any opinions?

    Nice 👌- I just figured out that I was lactose intolerant a few months ago. I tried soy milk and have loved it ever since. I think the maple syrup in hot soy sounds tasty.

    Thank you for producing this video, Mary. I search for "simple soy milk" because this week, I tried a store bought soy milk that gave me digestive problems. I stopped using it on my granola cereal and the problem went away. This is not true of all store bought soy milks, but this particular one boasted of being "plus". I read the ingredients on the box. It had seventeen ingredients. I think that one of those ingredients was causing me digestive problems. I am lactose intolerant so going back to milk for my cereal is not a solution. It's good to know that soy milk does not have to be complicated.

    I am trying to be more efficient with making soymilk without having to buy a soymilk machine, so I found it works for me to make the puree in advance, freeze it, and later take some out, add water, cook and strain. Then I won't have to pull out and wash the blender too often. I tried freezing the milk but it separates and requires using the blender again to homogenize it.
    I also noticed if prior to cooking the soy pulp, if I let the puree rest for an hour it does not foam up as much when heated, which makes life so much easier.

    To answer your question, The two step process is designed to reduce the beany flavour/ bitterness of the soymilk. This method is just a bit more simple. However, I'm experimenting with another method that is supposed to be even more simple and result in a less beany taste.     1 cup dry makes 3 cups soaked. Remove skins or not. Blend beans. Remove pulp. Use it for some thing else. 5 cups water for 1 cup dry bean. Cook to remove raw bean taste.

    I absolutely am informed about soy products (in the U.S.) and yes, with the exception of organic tofu, soy products are ALL tampered with by Monsanto (who puts in fungicides, pesticides and germicides). This is why I came to see how much trouble it would be to make some. It’s a lot more time consuming but can replace, in certain recipes, the almond milk and other nut milks. So I’m going for it. I’ve been recovering from cancer by eliminating non organic and processed foods (who knew) as part of a drastic lifestyle change. Having had no chemo or radiation I can only attribute my recovery to these changes (and the fact there’s lots of links between cancer and animal consumption now that’s not backed by Big Pharma trials). Bone cancer in spine, sacrum, hips, sternum and breast. Now they can’t find ANY. Kind of living proof (for me).

      Just had another CT PetScan and after 1.5 years I’m STILL cancer free. The doctor said to just keep doing whatever I’m doing. No meat, no dairy, no meats, no sweets (unless natural) and no refi ed foods. It works for me. Finally!

      Congratulations on your recovery! I am always so excited when I hear about any recovery with out the use the "Big Pharma", chemo or radiation. I personally would NEVER do chemo or radiation, it has been proven that it does more harm than good. We have just been brain washed, so they can make the almighty $$$$.     Great video! I read the okara can be used as a substitute for egg in baked recipes. I use it to make homemade veggie burgers. Today I used the soy milk and okara to make bread pudding with banana and raisins, and you cannot taste the difference vs. dairy milk and eggs. Delicious!

    I'm not vegan- or even vegetarian (I only consume ethically sourced meats- so usually fish I catch myself or eggs from my parent's pet chickens). But I'm planning a very lengthy bike trip, so I'm sourcing multi-use, DIY, cheap and easy to stretch out food stuffs.
    This is perfect- I can have milk AND protein base for burgers or other meals all out of the same packet of dry goods. Why carry two different bags when I can get the two out of one item?
    So efficient, weight wise and money wise.

    thank you for making this tutorial! I'm currently watching a few tutorials on the subject, what's the difference between doing your way and getting the okara, and boiling the beans first and then blend them? is it just that you get the okara your way, or is the taste different? thanks!!

      +Elisa Groli Watch my new soy milk tutorial which is linked in the description. This one is more beany but is easier to squeeze the milk. The new way is quicker (no soaking required) and has less of a beany taste.

    Thank you for your video.
    It is a good idea to just heat the soy beans in the water that they were soaked in. This way less water is used and wasted and your final product has more nutrients.
    Also the second lot of water that you use to remove the skins can be kept for a soup or to water plants in the home or garden. It is not good to keep throwing away water while cooking as it wastes water and throws nutrients away.
    It is good to keep the skins of the soy bean so that your final product has more nutrients.

      It wouldn't be soy milk so much as soy slurry if you don't remove the pulp...You can try it but I don't think it would be very good.

      Are you soaking your beans in the fridge? I would recommend that if you don't already to prevent early fermentation.
      Selling homemade soy milk without extra preservatives or pastuerization would be challenging though. The protein, fat and water content just make it so condusive to fermentation. It just won't last long.

    I used to follow another traditional Japanese recipe in which after grinding the beans they are boiled and then drained to separate the okara, then the milk is boiled again and simmered for 5-10 minutes. Its more complicated but I believe there needs to be some reason to bring the grounded beans to a boil before separating the milk from the okara. What is your opinion?

    I don't understand why you have to remove the skins when none of that is going to end up in the milk. I have made soy milk without removing the skins and it tasted just fine to me.

      +Semi Veg There is a difference in the flavour. I've tried batches with and without using the same batch of beans. But it's not huge and you can do what you like :-)

    Hello Mary!! I have just recently joined your channel, and i really dig the charisma and simplicity with wich you explain the cooking, great works!
    I was wondering about the nutritional facts about this milk: When you comment that the longer we cook this milk, the more the proteins break, does this mean that after a period of time, the soy milk will not retain its nutritional value? (im mostly consume soy milk because its such a great protein for breakfasts and other meals)
    I would love to see any answer to this, xo xo from chile

      I think the longer it is cooked makes the protein more easily digestible that it does not cause stomach upset for some people.

      m. taylor is right on! At least, that is how it was explained to me by a soy milk stand owner. All the nutrients should still be there! Our bodies put them back together for what we need them for.
      My own thoughts are that any starches in the milk get broken down so it tastes sweeter too. Like when you chew bread for a while and the amylase in your mouth breaks down the carbs into glucose and makes it taste sweet. Only my guess tho.

      Chrome ikr who cares that they forcefully impregnate the cows by practically sticking their arms up the cows rectum or that their babies get taken away from them hours after birth to either do that cycle it’s mom had to endure or become veal. Or is it that they get their horns and tails cut off or is it that they get tortured and then killed to become hamburgers after they can’t produce milk.     With the residue, you can add some flour,, eggs, some chopped prawns, onion, carrot, cilantro and salt. Mix well and deep fry spoonful by spoonful till golden brown. No need to add water if the consistency is thick. Yummy.

Had painstakingly spent almost two hours removing all the skins from the soy beans lol. A question - is it normal to have so much foam on the surface while cooking the soy milk?

    Update: my soy milk came out to be beautifully accurate, it's tasty and a little bit sweet and every single thing u said was correct.....after boiling it, I got a little sweet scented smell.....it was awesome, thankyou so much.....my mom said it was a little on the watery side.....lol I said they ACTUALLY taste like that...

    I love this method. The soy milk tastes exactly like what I had a long time ago when soy milk wasn't mass-produced. I have a question regarding soaking the beans: You said to soak to beans for a day or two. I assume you stored the container in the fridge? Because in the accompanying blog post, you mentioned "8 - 12 hours in the fridge or faster at room temperature".

      yes I always soak in the fridge. But back in the day, I would soak on the counter for a few hours. Never would recommend it nowadays though.

    Tips for people making this:
    - Apparently, you can't make soy yogurt from this. You need unboiled soy milk for that.
    - You can put it in the freezer. When you defrost it you get these bits, but you can blend the soy milk again and those bits will disappear.

      Don't cover; soy milk will bubble over easily and even more easily when covered. Keep an eye on it :-) good luck!

      Ehh...you may want to go ahead and simmer that on the stove for a while. Undercooked soy milk may give you a belly ache.

      Store in the refrigerator...colder is better. It keeps up to 3 days.

    I'm in a Facebook group for making vegan cheese. They're pretty experienced, and the majority of them say to use soy milk in the recipes, instead of almond or cashew milk, and they make their own milk with a soy milk maker. Have you tried making soy milk using a soy milk maker? The process you used in this video makes it seem so simple. Some in the group wrote that it takes days to make their milk because of all the processes they go through.

      I soak overnight in fridge simmer in fresh water cool and do the get skin off I get nuts must get each one!
      But i simmer the beans 20 or more minutes till when split there flat and semi soft not rock hard drain rinse in cold water..
      Then put measured amount of beans water
      Pulse blend till white and no beans visually Then strain you can use a pillow case cheese cloth like a nut bag
      Nut bags best lots on Amazon oh pinch of salt b4 blending beany put in glass jar .I use it for cooking mashed potatoes baking bread or coffee cake and the main reason Making Vegan Cheese! You need absolutely nothing added just soy beans
      The Gentle Chef Micheal Conroy has bunch all vegan make your self from cheese to shrimp im making seitan sausages later they freeze great and deli slices better than store bought way way way cheaper fresh n not a list of weird ingredients Tastes better.
