Also if you want to add more flavor add another package of bacon. If you need to stretch it out for more people add more chicken, it’s the cheapest of the meats and the most tender!

I didn’t say an exact temperature, but you’ll want your heat at medium high when you first throw everything in there to get that good sear. I usually go by the oil, once i start to see a very slight smoke coming off the oil I’ll put a small piece of the meat in the oil, if it starts frying then you’re ready, if you put it in and it just kinda sits in the oil or hardly bubbles, then the oil isnt hot enough.

In Spanish its called a disco, some call it a plow disk and others even call it a cowboy wok. They started out as plow disks with the centers welded closed and used to cook over a fire, nowadays they just make them from regular steel or stainless steel. I got mine from www.southwestdisk.com/
@@jasonnavar7958 I didn’t time the sear but you’ll cook them till the outside is semi golden brown. You won’t get your final color till after you add in all the other ingredients. Just make sure they are all uniform in color before you move on to the simmer stage. You may have to move some out if they’re seared correctly while the other pieces catch up.
My wife is Central American, I lived down there when I was in the Army and they don’t do the Caso thing but I bought one about a month ago, we had 15 people over and I bought 10lbs of pork shoulder from the butcher boneless, I actually cooked it the same way before I seen this video and maaaannnn, her Mexican friends said I was crazy because “you need a pound and a half per person” lol being the only gringo there I followed their rules and waayyyyyy too much meat lol (they brought 15lbs on top of my 10), anyway after it was all done I made my wife watch your video lol I hate cilantro too. 90% of my best friends in the military were all Mexican so I had a good idea of how to do everything, plus her friends brought “very hot sauce that I can’t handle” but it wasn’t even a quarter of the spice my hommies in the military used lol I am starting to question her friends Mexicaness lol I’m about to call my friends to come visit from Texas to back me up 😂 great video Sir and thank you for reaffirming what I thought was correct on video ❤
