That was a nice simple version of bench sync,
    They are 'three jet' carbs.
35 is pilot or slow speed/idle,
    68 is primary main jet,
    100 secondary main jet.
The primary main has a drilling to the pilot jet which is why it has screw in blanking plug (the alloy washer is for vacuum plug)
It's very easy to get bike running really well on pilot and primary, people start having problems with the secondary main jets when they fit 'pods'
Around 4~4,500 rpm slide starts to lift and the secondary main jet starts delivering fuel.
Honda factory manual isn't always correct as the '100' may be a 105 or 110, updates were only in dealer service bulletins which, in our shop, often 'went missing' within a week or two (or sometimes the stores guy opened mail and tossed them straight in the trash)

Make sure to put compressed air through the 3 jets below diaphragm and in the bore by the throttle slide run a guitar cable through and compressed air. Many folks forget these and it affects idle…

P.S. Neat trick using the welding wire to synchronize the throttle plates.

I just bought and fixed up a CB750 DHOC Nighthawk back on the road. I don't understand how the OG CB's could be better but I'm sure it's possible.

Marvel Mystery Oil works good in the cylinders too. I learning a lot from your channel.Invest in a set of K and N reusable filters if you're gonna keep the bike.

the tab is there so the float won't fall too far and cause the needle to jam open.

Nice job Benny. That type of carburetor is not my favorite. Every time I need to do one the diaphram is junk. They are not cheap either. I try to use factory parts, but when I find out factory parts are made in China, it's aftermarket here I come! For quite a while I have been doing outboard motors under 25 hp. The replacement carbs from China are so cheap and work so well I replace rather than rebuild some models. Enjoying your video, as usual. Dave
