You are missing the malanga (taro root) i believe is called in english. Not sure . That's the most important vegetable in a cuban soup. Maybe you don't like it either lol. But the soup looks delicious. Thanks for sharing

That is a great idea to put a corn cob in the broth. I'm going to boil all my corn in stock from now on. I don't know why it never occurred to me to do that before. As to the soup that looks amazing as well Julie. :)

N E V ER put spaghetti or any type of noodle directly into your broth! Noodles have starch that will cloud up and thicken the broth - and if you plan to eat it the next day, GOOD LUCK because it will be a coagulated clump of grease and fat. Cook your noodles separately!

I'm part Mexican, and my mom makes chicken soup with, cabbage, carrots, mini red potatoes, corn on the cob, and squash. It's my favorite dish from her. Sometimes I like to add a little bit of rice. I always put shreds of corn tortillas too. Just thinking about it puts a smile on my face

Remember how you sent me a youtube message asking for me to take a look at your channel? I've never looked back ever since then. I like how your videos are pretty simple and direct. I haven't cooked any meals from your video though, because half of the time I lacked a particular crucial ingredient. The video I remembered watching the most times was your pesto pasta :P.
But this time I'll be sure to cook your Cuban Chicken Soup. I'm just wondering if the chickens can be seasoned with Garlic Powder, Salt and Pepper (is olive oil necessary too?) only? And for the sofrito, is that is optional? I mean I have onions and garlic on hand, plus paprika. I'm just wondering if the entire sofrito process can be skipped. Or can I throw in a tea spoon of Paprika and be done with it.

YES I'm in college and don't have a whole lotta time to cook, so what I usually do is cook something that can stay in the fridge for a few days like curry or beef stew and eat for a week. This is gonna make a nice addition.
