  • Here I share with you my very own recipe for Cuban chicken soup. This is a family favorite and I'm sure you will enjoy!
    Note: I unintentionally omitted some pumpkin which I use on occasion but not always. I also omitted the green pepper as we do not like it but it is a usual ingredient in Cuban chicken soup. Please share your thoughts below and let me know what you think. Enjoy!!!
    Ingredients:
    4 Qt. water
    1 whole chicken (skinless)
    2 large potatoes
    1 large malanga
    2 carrots
    1 large onion
    5 garlic cloves
    2 Chicken bullion cubes
    1 Tbs. Badia Sazon Tropical
    1/2 tsp. Ground Cumin
    1/2 tsp. Oregano
    1 Tbs. Salt
    Angel Hair Soup Noodles (to taste)
    Mojo Marinade for frying chicken:
    Juice of 1 lime
    4 cloves garlic (diced)
    1 large onion (sliced)
    Salt to taste
    I hope you enjoyed this video. Please leave me comments or any questions you may have and let me know you dropped by. Thanks for watching! For more recipes like this and vlog style videos, please subscribe!

    A few days ago I felt like I might be getting sick, so I was in the mood for some good ol' chicken soup Cuban style to fight off the bug, so I came to TH-cam and found this video…OMG! Que cosa mas rica!!! We've been having it for the last three days and cannot get enough! I'm currently in the process of making another pot! Thank you!

    Thanks, thanks for sharing🙏🏽 I just made a big pot of chicken soup last night. I put my Sofrito in it and I must for me is Yucca. . I don’t put pasta because it’s already a very starchy soup. Also add pumpkin. It was so delicious.

    i find it so interesting how you removed the chicken and went on to fry it as a side dish. ive alwaysssss had a huge fascination with cuban cooking and find it so hard to find cuban food in my area and the good places all closed. so now ive resorted to making my own cuban food at home!! im of puerto rican and italian ethnicity but my husband is dominican. I love how similar yet uniquesly different each of our sister islands shares the same flavors with slight differences. I make cuban food at home now and lets just say we are a very happy family here!!
    im really going to rty your method of cooking the soup this way my next time around. it is sooooo much simpler than my recipe but nothing short of excellent!

    Lupie, this is a great chicken soup, congratulations, I like how you fry the legs and quarts
    and make a succulent second dish, that’s the old way, try using yucca instead of the malanga and you will taste the difference, thank you for this beautiful presentation...

    A Cuban Chicken Soup without Malanga is not a Cuban Chicken Soup.

    • @LupieHousewife
      @LupieHousewife  6 ปีที่แล้ว

      I've actually been making the soup with only malanga lately because the potatoes always fall apart. Plus, the malanga tastes so much better. It's just that not everyone can get their hands on it and that is ok too. It makes the soup better but without it, it's still Cuban soup just a different twist. 😉 Thanks for watching!

    you can place your seasoning vegetables into a cheese cloth so when it's done you just pull the tied pouch (cheese cloth) out and continue without having to strain it.

      Why didn't I ever think of that? Thank you for the idea!

      Badia is a good brand and Goya is good too. You're bound to come across those brands at the market. Sometimes Walmart and Target have them I think. :)

    Do you put the fried chicken in the soup at the end?

    • @LupieHousewife
      @LupieHousewife  7 ปีที่แล้ว

      No. When I remove it from the soup, I season it more with fresh garlic, salt and lime and fry it. Basically, pollo frito. :)

      Thought I’d give you an update. I’ve been making a larger pot and adding extra chicken so when I take it out I can shred it and put a few back in. I still keep the larger amount of chicken for frying. Happy Holidays!!!

    I like it. Good job. I see a lot of people just boiling chicken in water. You May want to consider searing the chicken with the seasoning and onion and vegetables 1st before adding water. Your infusing flavor into the chicken that way. Not just boiling it. Anyway everyone does it different .just the way I was taught . Same way I would start fricassee.

    • @LupieHousewife
      @LupieHousewife  5 ปีที่แล้ว

      I've been seasoning the chicken a lot earlier lately and then searing it before adding it to the soup. It has made a huge difference. Thank you for the suggestion. Merry Christmas! 🎄

    This is not Traditional Cuban Chicken Soup. The chicken should be in the soup.

    • @LupieHousewife
      @LupieHousewife  4 ปีที่แล้ว

      The chicken was and could stay in the soup. As you can see, I chose to remove it and fry it and never said it needs to be removed completely. It’s just what I chose to do.
