I roast a whole butternut squash in the oven, halved with a bit of oil rubbed on, for 1hr30 at 180. Then blend up with 100g cheddar and 1/2tsp of paprika. It's a really nice hidden veg pasta sauce for me and the kids!
I roast butternut squash halves but then I scoop out the flesh and mash it with some butter. I add cooked onions, garlic and some sweetcorn. Mix it in with the mash and scoop it into the butternut squash halves and cook for 10 minutes. I loved stuffed butternut squash. Coincidentally I'm making it tonight 😂

I really enjoyed this! We get oddbox in my house and it was so good to see similar excitement over the unveiling of the box 🤣 It makes food so much more exciting i dont know why?! Oddbox are also very good with recipes and are very active with ideas on Instagram too. I've become so much more into cooking when someone else chooses my starting point! Good on you for being so open about what you're eating. I'm vegan and hope that I always will be but it's good to see someone comfortable with their current diet. Food is for enjoying 🤤

I admire your mad cooking skillz, Lauren. I just don't like cooking, but maybe if I received everything in a box I could try that out? I'm in the US but I know they have meal boxes here as well. My brother, who loves cooking, simply cuts the butternut squash in half and puts it in the oven with [I can't believe it's not] butter and brown sugar. That's why I love going back home to Minnesota in the fall. Squash and a fish fry with sunfish that my OTHER brother has caught over the summer, and the trees changing color.
this is so relaxing to watch - you are a masterchef i’ve been some form of vegetarian for 9 years, switching between veggie or pescatarian or vegan but never eating meat and never missing it in the slightest, and suddenly last year I got the stronggggest craving for meat! I resisted for six months or so and eventually caved and listened to my body so currently i’m back eating meat - it’s bizarre how that can happen! I’m hoping to get back away from it but for now letting my body lead the show
I’m pescatarian and for a long time I used the ‘well my partner still eats meat so it’s a compromise’ as a reason that I’m not vegetarian, but lately I’m trying to avoid that - I eat fish because I like fish. I don’t miss meat at all and don’t think I’ll ever eat it, but fish is a weird one because I don’t have the emotional attachment to them like I do with cows or pigs.
Don’t feel bad about eating fish! Your body will tell you what it needs ☺️ I’ve gone vegetarian a few times and always go back to meat after 2-3 years 🤣 love this style of video! 💖
