I was unable to get a good loaf of sourdough down here in humid Florida - until I didn't put as much water in. I wonder if your first loaf would have turned out different if you had used more water. Just a wonderment - not a discouragement. I think it's wonderful that you are doing all this so that others will enjoy their bread experience even more. You have a superpower of wanting others to enjoy their life even more. I know it worked for me. - I enjoy your videos so much and specially the time it took to make this one - days. Mary, you make me so happy! You’re kind words just make me smile! I just finished making some little pumpkin pies in a little gluten-free crust in a small cupcake pan. The filling is pumpkin, cream cheese, brown sugar, and pumpkin pie spice. My daughter went crazy over them and she doesn’t even eat gluten-free. I can’t wait till tomorrow night. I have a couple other things up my sleeve too. Maybe I’ll try to take a picture of all the gluten-free things I did, and put a picture on my Community page. Our air here is so humid that using less water than required helped a lot and I thought maybe you could just use a little more - tweek it. I made the pies linked above for community dinner last night. Only I put little balls of dough in mini cupcake pans and press it up the sides like a pie crust. Then put the filling in. My daughter who does not eat gluten free said they were delicious. Enjoy!

Hi Kerrie, thanks so much for watching the video. I had to have my Berkey high enough that I could get my sourdough starter jars under it to fill. So I just bought a plant stand off Amazon. Here is a link if you’re interested…a.co/d/aJXcz7q It works like a charm! Blessings!
I have been making gf sourdough for years now. I have a few suggestions if you don't mind. I hope you find them helpful. First I use the bakerita recipes. Second, a smaller dutch oven is suggested and does help with the lift. a banneton is also extremely helpful in getting more rise. And lastly when you turn it out onto the parchment use your gray scraper and gently scoot it under the dough ball to tighten and lift it. Scoring is also very important so it allows the gas bubbles to make it puff more. Hope these tips help. Loved your video 🥰🥰🥰
