    That flat had a good amount of fat left on it. Out here a flat has zero fat. I need to go shopping at your super market. Nice cook Rus. 🤘

      Yes it had a lot of fat. I normally don't leave that much on there if doing a whole brisket, but after seeing how juicy and tender it was, I'm glad I didn't trim it. Thanks Joe!

I finally got mine over to Mobile where I'm now shooting videos at Derek's place, so there will be many more videos coming out in the near future.     That looks beautiful man. Was looking in Costco the other day for another epic packer but all they had was flats. I've never done just the flat before, after seeing this I'm guessing I need too. Glad you and Mike got to hang out. Cheers brother.

    Hey Russ, I love the brisket flat. it's so much easier to cook up than the whole brisket with the point attached. Burnt ends are my favourite. Keep up the good work fella. 10 hours well spent!

    our a/c unit (for our 3 level house) broke down about 2 weeks ago, here in norther va, it was and has been blazing hot nearly every day, so we finally broke down and got a good quality portable a/c unit which saved us.. it cooled the whole upper/3rd level and when some fans lined in front, i even pushed some cool air to the main level. you DO need a window to just put the little slide thing and the tube just inside of the screen (so you dont have to worry about bugs getting in) and i see you have a window there, so, that would have really cooled you down, but for those with no window for venting,, your little a/c with ice packs seems like a good 2nd choice. ok, back to the yummy video. :-)

      Can't really tell in the video because we have two sides boarded up, but that is the back porch and one side is wide open. It's actually outside, so this swamp cooler is doing a good job under the circumstances. Yeah, got to have something, it's way to hot outside right now.

      I've owned several pellet grills in the past, and none of them can lay smoke down like this LSG pellet smoker! I seriously can't tell the difference from this pellet smoker and my LSG offset! So close, it's not even worth talking about.

    I don't know where you are located, but swamp coolers went out in the 50's when air conditioning came into being. Unless you are in the desert where it is extremely dry, swamp coolers will only make the heat worse as you add moisture into the air.

      A/C doesn’t do a bit of good outside, and I couldn’t disagree more about making it hotter. Feels like nice cool air all day long, besides that it can also be used as a fan.

    Man I want this smoker but 3k is an investment. Thinking about the Weber Smokefire Stealth instead. Heard it puts out tremendous smoke flavor and the newer models are assessing a lot of issues. I’m coming from a Recteq and love the unit just don’t feel like I get a great smoke flavor. Great video.

    Hey Russ, just wanted to ask your opinion. I know you have used many SPG blends by different manufacturers. This on in Particular from PS Seasonings. With that being said.       I can answer that here Jim. I've had 3 that I really like and that is Suckle Busters SPG, Mississippi Grit SPG, and I can tell you now that this new SPG from PS Seasoning just moved into 1st place, but you ain't gonna go wrong with any of the 3. All 3 have really good flavor, and perfectly balanced.

    brisket flat is pretty expensive. I buy the whole packer and just separate it. vacuum seal point for a later day and save some dough.

      Around here the flat per pound is cheaper than a whole packer brisket per pound. If I'm just needing a small amount for another recipe then the flat usually does that easily. Thanks for watching

    You never did say what you had your probe set to for the internal temperature.

      I don't go by internal temp on brisket. I do use a thermometer to tell me when I'm in the range and usually that is around 205°F or higher but I check tenderness by probing the meat for tenderness. Temperature is not the final indicator if it's time to remove and rest. Thanks for watching!
