- This video presents the preparation of the taguella, the bread of the Tuaregs of the Sahara desert.
Taguella is a bread baked under embers, ashes and sand.
This video was shot in September 2019 during my trip to the Tassili N'Ajjer Plateau in Algeria.
I hitchhiked across the Sahara in 1980, from Ghardaia in southern Algeria to Agadez in Niger. One of my rides was an Algerian truck driver who spoke no English or French and picked me up. We stopped overnight in the desert and I shared my food with him and he, his with me. He made the same bread using the same cooking technique and it was delicious and I was amazed there wasn’t a grain of sand in it. I still remember falling asleep in the desert looking at the incredible Milky Way. Enduring memories!

In Saudi Arabia the method is a little different. We put the bread right on top of the charcoal. The charcoal should not be red hot meaning it has to die off a little bit.
Notice that this is a tough bread. It usually isn’t eaten by itself.
For a fancy meal people would sauté chopped onions and tomato in gee or butter. Then add finger tips pieces of this bread to the mixture until it soaks up some the juice. Best served with melted butter.
For a quick bite or breakfast, this bread is cut into palm size pieces. Enjoyed with melted butter and honey.
That's very interesting & sounds so good.
In algeria they also make a some kind of spicy sauce (broth like) with veggies and meat, and break the bread into small pieces before serving the sauce on top..it's a bit like the north-eastern (chekhchoukha شخشوخة)
It amazes me how peaceful these people are! You can feel their dignity, their wisdom and their modesty! I would feel safe being with them! I wish I were!

This kind of thing is why I enjoy watching videos about foreign cultures. It's unthinkable to me to cook bread by having it directly touching the ashes, sand, and hot coals, but actually, it wouldn't be too bad, you just don't eat that part of the crust. Everything else inside would still be good. And this makes sense, because you're not carrying a large, heavy pan with you whenever you're traveling around as a nomad.
If you notice he sprinkles flour on the bottom and rubs flour on top and the sides. This protects the bread from ash and sand.

Hot ash is ok but no sand should reach the unkcooked bread. Flour is not needed.

С оливковым маслом, оливками, овощным соусом или хумусом, да куча вариантов… рагу овощное с мясом есть в каждой стране сахары и севера Африки. Такой хлеб прекрасен ко всему.

Si les femmes Françaises apprenaient à faire le pain et s'occuper de leurs foyers , au lieu de trainer et vouloir être des femmes libres. alors il y aurait moins de problèmes. Peux tu donner la recette pour la préparation de la pate pour ce pain , ma femme a tenté de faire le pain du Ramadan , mais bien qu'il était bon je l'ai trouvé trop plat . Merci ami je suis chrétien mais né en Orient , mon épouse est d'origine Kabyle et depuis 25 ans je mange hallal car j'ai eu un grave accident et c'est ma femme qui m'a remis sur pieds . Dieu est grand car il apporte çeux qui respectent ses lois , le bien être et l'appaisement .

En Chile se hace el mismo pan, se llama "tortilla al rescoldo". No tan sofisticado como los beduinos - hay que acordarse que una vez la cultura árabe fue la la más avanzada del mundo - pero básicamente lo mismo.

You can keep your stupidty to yourself! Bedouinity is to live in any desertic, dry place, and move from a place/ spot to anither (even for short distances, searching for water and herbs for your animals...
Bedouins can be Arabs, Berber, Africans, Turks/ Turkic, Chinese, Indians... The common denominator is that they live in harsh, dry places, and they need to move from a place to another...
Taglla is an other dish in Tashlhit language completely different. For bread, we call it aghrum. We salute our Tuareg brothers!
I'm from northern Rif mountains in morocco, and we call bread aghrum as well. Actually our tribe says aghum (we remove the r from most words) but most other tribes say aghrum.

Those whome want to life this live you dont know how much its hottttttttttttt and windy and dust every were and hard to wash in disirt.
There are some inconveniences but there are also a lot of interesting things like the landscapes, the silence of the desert, the magnificent sunsets and the unique starry nights.

my grandfather has been to Tassili Najer algeria in 1960 as an archaelogist, nice video, although a very big country algeria but unfortunately sahara desert cover 90% of land, I think most people live near mediterranean coastline
