    I love teaching my kiddos how to can. My grandmother taught me and I feel closer to her when I continue to carry on those traditions in the kitchen and garden!! It makes my heart happy!! Good job Mama!!

    I am looking forward to fermenting my sugar rush peach peppers and black Hungarian peppers together! It should be sweet, spicy and an awesome mix of purple and orange color! This is our first year growing the sugar rush peppers and the plants are doing great! I love that your adding fermenting to your Homestead.

      @@vickiscott8549 We ordered both from Baker Creek Seeds! We still grow the black Hungarian peppers they are very similar to jalapeños but have awesome color and flowers.

It is exciting that Samantha wants to learn how to garden and preserve the harvest...I'm sure you are so happy to teach her.       @@BryansGMa I make a brine similar to how I ferment cucumbers. 2 cups warm water (do not use tap or chlorinated water......I use spring water) and dissolve 2 tbsp of sea salt or pink Himalayan salt for the brine. Set aside. Add some fresh dill, 2-3 cloves of garlic smashed, 2 tsp of mustard seeds, 1 tsp peppercorns, and 1/2 tsp of red pepper flakes to the bottom of a quart or quart and half size Mason jar. Rinse the asparagus well and snap off the woody ends i toss woody ends to the compost or some people use them for soup. Pack the aspargus into the Mason jar really tightly. Pour the brine into the jar leaving about an inch of headspace. Place a weight or something (very clean) on top to hold the asparagus under the brine. Cover and store in a cool place for 2 or 3 weeks. Make sure to "burp" the jar daily. Unless you use the fermenting pipes which does it for you....but I just use a regular lid so I open the lid daily and re-close loosely. Check the flavor after 2 weeks and they are done anywhere between 2 to 3 weeks depending on hour "sour" you like them.

      Oh I add a bay leaf to the bottom of the jar as well. It helps the asparagus keep their crunch.

    I envy your garden! I started canning about 2 years ago or so and in that time I've steadily grown more and more comfortable with it. My hot sauce, chili sauce and sweet relish recipes are getting quite good too. You've inspired me expand my selection of canned foods to, well, virtually everything and to start pressure canning.     Hi Sarah and Samantha, The longer you wait the more Sour they become. I am fermenting the Golden Acre cabbage at the moment to make sauerkraut. Aren’t you able to can them after you have been fermenting them? Eveline in Scotland.

      Yes canning saurkraute after you ferment it can be done.

    I've loved getting more into canning and opening the jars is always the worst part. I love pickling sugar snap peas, my favorite.     I love it that you personally eat everything you show us how to preserve. It makes me feel like I can trust home preserved food.

      If anything goes wrong with your fermentations, it will be really really obvious before it can hurt you. (Bad bad smell, or fluffy mold on top.)

    Way to go! I so enjoy watching your videos. I am now retired, and finding my way back into doing a lot more canning, and prepping for what may or may not lay ahead. I have ordered a fermenting kit and waiting patiently to use it for the first time. We live on a small hobby farm and have raised two of our own children. We have also had the privilege of welcoming and raising three other children into our home over the many years. They are now all grown and we are so very proud of them all. In this time of living with COVID, we are not only caring for my 94-year-old mother but we find ourselves not only proud but worried as our three girls are all nurses and working closely with Covid patients. Thanks to your videos you have encouraged me a few months back to get busy canning again and preparing foods from our garden. Thanks to your motivation, we find ourselves at this time in the middle of Covid, more relaxed and able to stay at home with a lot less stress. Keep up the good work and raising your girls to be knowledgable and independent to look after them selves. Good job mom and dad. !!! ❤️ 🇨🇦
