Thank you Donna 💕I normally like to leave them on the vine to ripen but the nights are cold here. When it's cold like that the growth gets stunted and they will start dropping the fruit. You can always ripen a tomato inside if it's started to blush 🙂
I love how you are harvesting your seeds for next years planting. I know it takes up space but it’s so rewarding to not have to buy seeds. Love all your varieties of canning. It all looks so good! Those large mason jars from Costco were a deal at $18.99 - $5.00 coupon. That's why I bought 2 🙂I plan on eventually using them to ferment things like peppers and make my own hot sauces. I also want to make my own sauerkraut.

I paid $160 at Costco a few years ago and now they sell them for $120 (which is a steal for a stainless steel heavy duty shelf like this with lockable wheels I might add). It would make a fantastic onion drying rack for sure, lol.

I forgot to mention that if you set bananas beside the tomatoes, they will ripen faster. This stainless 5 tier adjustable shelf I got from Costco and paid I think around $160. They are selling them now for $120. They are well worth the investment and have a carry load of 2000 lbs.

Your zucchini relish looks yum. Are you thinking about doing dehydrating on a larger scale? How different would doing sun dried tomatoes be - would they need to be used faster?
Thanks so much 🙂 It's very tasty too. I'm looking forward to doing more dehydrating on a larger scale but just don't have the equipment right now. It really depends on how the sun dried tomatoes are stored. If stored in oil, they are shelf stable until opened, then good for an additional 6 months after opening in the fridge. Many people freeze them or vacuum seal and then freeze. Just vacuum sealing them will only give them about 6 months on the shelf. So this answers your last question and yes they would need to be used faster. You can also dehydrate tomatoes and once dried, grind them into a powder, which is another way that I would use them. I'm happy to answer any questions you have. Just give a shout 💕
I didn't make that vinegar. I used what I had on hand and infused goldenrod into it and then strained it through cheesecloth afterwards. I will be trying my hand at apple cider vinegar over the winter. We can learn together 🙂
