You need to preheat the kyusu. If not the water and kyusu will reach thermal equilibrium with resultant lower temp, its important to know the temperature of water and how it interacts with the kyusu. You're using a lotttt of water(ok that's up to preference). And you're pouring hard straight into the tea with too much agitation. Best to weigh the tea leaves and have a temperature controlled kettle to know the temperature. Also, the tea to water ratio seems to be only an estimation in this video. In specialty coffee, we are extremely precise with our steps and numbers, to ensure repeatability.

Isn't that 60 degrees celsius water, not 6? 🙂 Anyway, some people say it should be as low as 45 degrees, 2 minutes brewing.
