    How beautiful to see :)
I can no longer look at my gyokuro and sencha the same way, especially after seeing Mr. Yamashita dry the leaves by hand

Yes:) This is how top-grade teas are produced - with lots of care, hard work, dedication, and personal touch. And then, one can feel it when drinking a cup of skillfully brewed tea!

Very beautiful video. I've tried sencha once in my life and i still cannot forget the taste. Japanese teas are truly unique.

Are black and oolong teas really fermented? I thought they just oxidised?

Thank you for bringing this up. You are absolutely right! Black teas are fully oxidized and oolong teas vary from lightly to heavily oxidized. Pu-erh teas and other Hei Cha are fermented teas. It's quite common to use the terms "oxidation" and "fermentation" interchangeably, however, these two processes are not the same.

Not quite the Sensha-dō I was thinking of.
