That turned out great, and it’s good to know you can make cheesecake in the mini oven! I started using Greek yogurt in place of sour cream to give my cheesecakes a little extra boost of protein, and it works really well. I hope your finger heals soon! Sounds painful.

However, I have so many ramekins and small pans that I can't really justify going back for them. I looked on Amazon and found some silicon lids for ramekins and small pans. They can take heat up to 400 F. I'll order a set. They should prevent your small bakes from burning.
