The Cajun Ninja's Breakfast Eggrolls

    BREAKFAST EGGROLLS
    Vegetable Oil
    1 Onion
    3 Sticks of Celery
    1 Bunch of Green onion
    1 Tsp Cajun Seasoning
    Breakfast Sausage (Hot Brand Preferably)
    1 lb Maple or Applewood Bacon
    Dozen Eggs
    1/3 Cup Whole Milk
    1/2 Stick of Butter
    2 Cups Sharp Cheddar Cheese
    2 packs of Eggroll Wraps
    (A BBQ basting brush)
    Start off by preheating the oven to 350°. Meanwhile, you can start chopping the onion, celery, and green onion. Place them all in a bowl off to the side.
    Heat up a large pot over a Medium heat. While your pot is heating up, prep your bacon strips on a large pan, place in the oven and monitor regularly.
    You're going to want to take the bacon out just before reaching crispy. It's ok if you think your taking it out too early. You just don't want them to be too crispy, or you’ll end up with hard pieces of bacon in the egg rolls.
    While your bacon is cooking, drop a small amount of oil in the pot coating the bottom.
    Next drop in your chopped vegetables and sauté for 5 minuets.
    Next add the breakfast sausage and Tsp of Cajun seasoning.
    When the onions start to look translucent, set the heat to a low setting, and stir regularly.
    By now you should have taken your Bacon out or at least about to. You're going to need to cut the bacon into small strips. The bacon will be hot, so be careful or just wait till it cools a little bit.
    Add the bacon to the breakfast sausage and vegetable mix.
    Cook on a low heat for another 5 minutes. Turn the heat off, pour mixture into a strainer to let any excess fat drip. Then pour back into the pot, and place pot in the fridge to cool overnight.
    You can also put the pot in the freezer for an hour, if you’re doing them all in one day.
    Make sure you put the pot on some type of oven mitt or towel. Don't put a hot pot on a glass shelf.
    NEXT DAY. Take your stuffing out of the fridge. It's going to look like it hardened, but this is OK. Next process will help shape everything. You’ll need two pans, one to cook the eggs, and the other to fry the egg rolls. Add the half stick of butter to one of the pans.
    Scramble up 10 of the dozen eggs with 1/3 cup of whole milk.
    You will not have to season the eggs. With the bacon, cheese, breakfast sausage, and Cajun seasoning, there will be plenty of flavor.
    When the eggs are done, add the hot eggs to the filling and stir. This will break up the filling and cool the eggs.
    Once it's blended well, add the two cups of shredded cheese and mix.
    At this point add about a half inch of vegetable oil in your other pan. Set to a Medium/High heat and just let that heat up.
    At this time prep the dish you plan to put your Eggrolls in by layering with paper towels.
    Now take your last two eggs and scramble them in a bowl.
    Time to wrap. Sometimes it’s safe to save one wrap to test the oil.
    It's a personal preference on how much stuffing you put per Eggroll. I usually do roughly two full tablespoons. Follow the directions on how to wrap them according to the package, and use the egg wash to seal them.
    When you are done wrapping, drop the egg rolls, one at a time, into the pan with the half inch of oil. When you start to see some brown forming on the sides, flip them.
    Monitor each Eggroll from there by flipping. When they start to look golden, remove and set in the dish layered with paper towels. Let them cool for a few minutes and you're good to go!

    Delicious! Made a batch of these to freeze for quick breakfasts, but the family ended up eating a bunch for dinner and taking some to a friends as hors d'oeuvres!! Gonna make 'em again, maybe a few peppers to make them a little more piquant. Keep up the great work!

      I do egg rolls in an air fryer all the time. They come out great! Just keep an eye on them of course until you get the hang of doing that kind of food in it

      Mama Bear you make the stuffing the night before, but you’ll still have to get up early if you want them for like 8 am. But not 4am early. 😏

    Hey those look so so good! A long time ago someone made bananas foster egg rolls. It was banana with brown sugar cinnamon inside and dusted with cinnamon sugar on the outside. I have no clue what the recipe is but I bet you could make something similar and it would be amazing!!! I would love to see if you can make some!

    Those look super! I have a question for you. If one wanted a dipping sauce for these, what would you recommend?
    I ask because I can see myself serving these as nibblies for a party. A dipping sauce might be a nice idea for that kind of presentation.
    I'd interested to know what you think.

      I am sure a warmed up Stein cane syrup or maple syrup would be good. Last time I had something similar to this they served it with peper jelly and it was delicious also@

      I think a dipping sauce is preference. Some might like a nice white gravy, some might like a hot sauce, and some may like a pepper jelly. I say just try a few and find what works best. 👊🏻😊
