    Ingredients Used for the Recipe:
    For the Special Gravy:
    5-6 medium-sized potatoes (boiled and mashed)
    3 tbsp mustard oil
    1 tsp mustard seeds
    1 tsp cumin seeds (sabut jeera)
    ½ tsp crushed coriander seeds (sabut dhaniya, crushed with hands)
    1 tsp fennel seeds (saunf)
    2 dried red chilies
    2 sprigs of fresh curry leaves
    1-inch ginger (roughly chopped)
    2-3 green chilies
    1 chopped tomato
    Salt to taste
    ½ tsp turmeric powder
    1½ tsp coriander powder
    ½ tsp red chili powder
    ½ tsp Kashmiri red chili powder (degi mirch)
    1 tsp dry mango powder (amchur)
    ½ tsp roasted cumin powder (bhuna jeera)
    Hing (asafoetida) water (crushed hing crystals dissolved in hot water)
    Hot water (to adjust consistency)
    1 tsp kasuri methi (roasted and crushed)
    Fresh coriander leaves for garnish
    For the Special Masala Puri:
    250g fresh fenugreek leaves (methi) (washed, drained, and ground to a paste with 3-4 green chilies)
    2 cups whole wheat flour
    1 tsp salt (or as per taste)
    1 tsp carom seeds (ajwain, crushed with hands)
    ½ tsp red chili powder
    ½ tsp coriander powder
    ½ cup semolina (sooji) (for crispiness)
    Warm water (as needed to knead a tight dough)
    Oil (for deep frying)
    For Serving:
    Mango pickle
    Green chutney
