    I have an effervescent first ferment. The secret is really easy. When you take your pellicle out of the brew, give it a stir. Get those yeasts and bacteria stirred up ad you will get an instant head. Then draw out the starter you want for your next batch.

    PSA : Don't use paper towels. Use a cotton cloth. Less chance of infection from falling debris.

      Cheesecloth works really well, although a basic tea towel will also work. But yes, paper towels drop specks into the brew. Non buono.

    I put my brew on top of the refrigerator and it finished I. 6 days.just bottled 6 bottles of apple cinnamon kambucha. Its cheaper and taste better than store bought folks

    6:39 you can cut the center piece of the metal cap so that you have a real ring. Should work great.

    Lemon/Lime Nutmeg is really good as a second ferment. I am trying to think of how to use up my spices out of my spice drawer and this is my first combination.

      Actually, that isn't the case. I find that they've made it such that you shouldn't tip the cup too much when pouring it or you would risk spilling the contents.

    Great info! I have watched many vids on continuous brew systems but no one addresses how long you have to wait after replenishing the jar with more sweet tea before it is again ready to drink. Never mind- I saw in the comments you can drink right away- it's just sweeter. However, I wish it was addressed in the videos people make. Not just you but everyone making Continuous brew vids.

    The scoby is the fermented tea that contains all the probiotics and enzymes. Scoby stands for symbiotic culture of bacteria and yeast. The creature looking slimy thing is called a pellicle, it's just a thick membrane that forms as a result of fermentation

      @@Kitasstrophy its a fact…. The scoby is in the liquid, the disk is just a cellulose membrane that forms as a byproduct of fermentation. You do know what scoby stands for right?

      You don’t want to brew it in a metal vessel. The stainless steel spout works great!

    With the continuous method can you keep drinking it, or so you have to wait another 7 to 30 days to drink it again?

      Great question! You can drink it continuously without having to wait which is why I love this method so much. It will be a little sweeter when you first drink it and develop a more tart flavor the longer it ferments. Enjoy!

    So when you refill with tea you just leave the scoby in there right? Do you ever take that scoby out and put another in or how many uses for 1 scoby?
    I have been doing batches for months but want to try to do a continuous brew on tap

      You can keep the scoby in there and you don’t need to take it out or add others. The scoby will continue to grow and will eventually need to be thinned to keep it a manageable size. When it starts to get to large for your jar, just separate or cut in half. No limit to the number of batches. Happy brewing!

      What you are calling the SCOBY is actually the pellicle which isn't needed . The SCOBY is living in the liquid of the starter which is why you need a good strong starter and low ph level.

    So my kombucha is brewing but it has a new scoby on the top as well as one that is in the bottom! The tea I had left is also growing another scoby?? Not sure where to go from here?

    I didn't understand what's the difference between continuous kombucha and regular kombucha

      If it's not "continuous, the kombucha is made in separate batches, each time with a new jar, a scoby and starter tea.. In the continuous method, you just feed the scoby and have a "continuous" supply of kombucha tea from the same jar and same scoby (which will grow and multiply, you might need to separate the scoby colony). There is a video on youtube about the pros and cons of each method.

    How soon do you drink it after introducing the new tea? Won’t it take time to ferment the new tea?

      You can drink it right away which is one of the reasons continuous brew is so great! The kombucha will taste a little sweeter when you first add new tea. The remaining tea will continue to ferment until you are ready to add more.

    Does the scobi have to be on the bottom? My scobi is floating on the top. Is it good and ready to use in my brew?

      A 5 gallon bucket is the size that comes from Home Depot. Her jug does not look that big.

    I’m going to do this but I have a few questions...
    Do I drink it straight from this jar? Does it need to be in the dark or covered up?
    Do I ever have to take everything out and re-clean it?

      Hey! You can drink it straight from the jar, but i like to transfer the kombutcha in to glas bottles with fruit in them so it tastes better. And when ive put on the cap i but them in a dark place for a few days so it gets fizzy. And i like to clean my brewing vessel once every month with warm water and applecider vinegar. Hope this helps!     Every time I had a SCOBY it would get moldy and die even though I covered the container with a coffee filter and banded the edges. :(

      Did you have other types of ferments nearby? I do sourdough and keep it on the other side of my apartment. That could be a problem.

    Healthy scoby's should float to the top to adhere to a balanced chemical atrophy between carbon dioxide an oxygen. Not enough black tea or sugar could result in of a decrease in the size of a tissue or organ due to cellular shrinkage is due to anti-buoyantcy.

      The more you ferment kombucha with your pellicle, the thicker it will become .... it grows layers which can be separated

      @@josefkurzmann5965 there are plenty of things that are worse for children than kombucha. The brain scans they showed of people addicted to sugar look the exact same as people addicted to crack. I promise you giving your child soda can start an addiction before kombucha will.
