There are many reasons
1. Colour is more concentrated (means thick or contain more chemicals)
2.Sometime colour mix with cream or frosting change its taste.
3. High chemicals
4. Chemical reaction if you use in baking, it become bitter
Read proper description or ingd list before buying
Use only Gel food colour(some brands gel colour also taste bitter)
