Respect to Zermatt, he clearly was struggling in the final minutes but he forced himself to finish it. The amount of mee is tremendous, it's all dough, it swells in the stomach, it is heavy. Technically that is not ramen, it's mee noodles, it;s thicker, harder, heavier than actual ramen. Zermatt is sporting to dig into it and actually finish it. Bravo.👍👍👍

He is using same broth as tonkotsu ramen, but instead of tonkotsu tare(sauce), he using shio tare(sauce). And he called it shio ramen, in a way, he is right🤣
Shio ramen is typically a clear broth. For some reason, a lot of the shio ramen in Singapore is some variant of tonkotsu with shio tare. There are very few real shio ramen in Singapore. Shio to me is the best way to enjoy ramen, but seeing a cloudy broth was just 😅. Still you did the stall justice by finishing the entire thing!
I used to have this Japanese colleague who was obsessed with ramen and once said Ippudo is best in Singapore years ago. Later I bought him to Melben in Ang Mo Kio, he loved the claypot crab vermicelli soup so much he asked if they have a ramen version… I believe if melben had a ramen version, that would be top ramen of Singapore as the base is so good. 😂

Bari Uma #1 ramen in SG for sure. super rich porky taste soup base for Ajitama cha-shu ramen, you get super thick cuts of cha shu slices balanced between fat & pork and most importantly you can choose the firmness of your noodles!

As a grown man eating this normal one, its filling. And that's coming from someone who easily ate 3 or 4 bowls of rice on a normal family dinner, the chef here really dedicates his craft and doesn't skim on the ingredients. For the price point and taste, not just Zermatt bro, i can guarantee you cannot find a second shop with this quality at this price. That torched char siew was amazing since the first opening until now. Now i need to beat the queue liao 😂
