@@ritatice6044 I don't know if this is what the person you are replying to meant, but grits, and the way the corn is processed (it's called nixtamalization, and makes the nutrients in corn easier to absorb) did come from/develop out of a Native American recipe

Buying canned whole pimientos from Amazon and dicing them yourself results in considerably more flavor than the little jars that have been diced for months.

Nice pepper usage
Tip re dumping pasta water: know how quickly your drain works. If you dump too much water in some sinks, it doesn't drain immediately, and you risk dirty hot sink water pooling briefly and your fresh pasta sitting in it. Ick. A safer way is to put a small bowl in the sink and set the colander on top. Then drain away, you've got your colander raised above any temporary pooling.

In my experience you have to cook the flour a little longer to get rid of all the raw flour taste, more like 2-3 minutes.

I never ate Mac n cheese, I’m Italian and it’s not something we have eaten, at least with ALL the Pasta dishes I grew up with, Just never had it.
If you're Italian-American (British/Canadian/Australian, etc.) then you don't know what you're missing. I've expanded my Italian repertoire to Puerto Rican, Asian, and even German cuisine. Oh, and NO CREAM IN CARBONARA!!!
It's great, just don't get the cheapest box mixes.

Red peppers aren't old. Green peppers are called green because they're unripe. Green ones are the only pepper I don't care for. All others are on my menu.

@@ArcTifocx I enjoy watching the intro. I’m not in a hurry. I don’t necessarily sit thru the whole outro but it’s, to me, a better production when it’s there.

You misspelled pimiento. It's PIMIENTO, not pimento!
Not in American English it's not, especially in discussions of "pimento cheese." It's been spelled that way for over 100 years when pimientos first became a big import into the US and food manufacturers began cranking out cans of them by the thousands. Variations are part of linguistic history--see, e.g., color and colour.

My grandsons won't eat anything but kraft Mac and cheese. I tried to fool them one time, and it didn't work. This is too complicated for harassed moms.

Yeah, I agree. This doesn't look very good. Needs more sauce and some American cheese or sodium citrate to keep it smooth.
