Just tried it. It works great. When eating scrambled eggs, I won't make them any differently from now on. The texture is awesome. I think I might not want this same texture for something like a breakfast burrito, where, I think, I like that meatier egg to stand up against the tortilla, but any way else and this is the recipe for me. Honestly, my biggest surprise was there wasn't any fish sauce thrown in there...lol. I know Thai style eggs use it a lot. I believe the Taiwanese put some in for their infamous oyster omelets.

not necessarily beverly! you could easily make it in a nonstick skillet. Cast iron could even work as long as it is very well seasoned!

Hurrah! yes another person converted to the cornstarch game 😎you could add fish sauce but with the shrimp we like the clean simplicity of sesame oil!
