The thing is that their noble phantasms actually complement each other, Gil's Enuma elish is the power to separate anything while Enkidu's Enuma elish is the power that holds thing together
enuma elish is the name of a poem from the babylonic era,( I think it means "when on high") the poem is also known asthe seven tablets of creation (I haeve read one of them), I believe thats why they say that.

Why does this enuma elish look different than the fate strange fake one
This is Kingu manifesting the aspect of Chain of Heavens Enkidu While the one used by Enkidu himself in strange fake is him drawing the power of the planet because his Enuma Elish is the tale of The creation of of the planet.Gilgamesh version used through Ea is how the Heaven and Earth split apart(basically Big Bang). Gilgamesh states Ea does not destroy instead it shows the truth state of Genesis(Void)
