I’m going to make your recipe with my air fryer .. thank you for sharing your moms family recipe.
I Myself am Pakistani. “Authentic food” is what each generation lovingly makes and feeds its children. Unique to each home and family. End of. ignore those who don’t understand or respect what genuine personal recipes are. Just as varied as the people who make and eat them authenticity is individual and perhaps Local. As you rightly said, people travelled and migrated to lands, each country has many different regions and people of various faiths. Many other factors combine It all impacts their food. There isn’t a single land that ever existed where everyone all made the same dish in the same way. It always amazes me how each person does it differently and that’s the wonderful beauty of home cooking for me.

For those staying away from fried food, I recently cooked banjan by airfrying the eggplant and potatoes

That’s so good to know. I’ve done eggplant parm in the air fryer and it’s turned out well so it’s good to know it works for this recipe too thank you!

This made my day! Looks soort good🤤. Thank you!! Yesterday I ordered (amongst others) borani banjan for the first time at a local Afghan restaurant. This dish is just too good! I came here to search for the recipe to make it myself.. I love the option to make this with the unions and potatoes (cause the one from yesterday didn't have it but was still so delicious). I can't wait to make this! 👏🏻👏🏻

Yes, but when are you coming to Toronto to make this for me, Mirriam?? BTW, we're hoping our sponsored family arrives before summer. Thanks again for your shopping list for them. They're tired of living more or less in hiding in Islamabad. I always enjoy watching you. (and how do you stop SUCH a big jar of tomato paste from growing mold?)

Tomatoes, peppers and corn were only in North America. It was introduced to rest of the world by Europeans. Imagine Italian food with no tomatoes or Indian food without peppers. Food has no boundaries.
