Listening to you tell tales about your parents, I swear they musta been related to mine, especially about the steaks vs. hamburger "steaks." Years later, after my parents had passed and I was a Grandpa, I had a son broke, out of a job and freshly divorced come to live with me with his three kids. Amazingly, every lesson I'd learned from my parents about saving money and feeding a bunch came back. Pork and beans (real ones), chili, chicken noodles, "hamburger steaks" were all on the menu. They kids ate all of it and enjoyed every bite without a complaint. When they moved back out, they were clean, healthy, in good shape, knew how to ask the blessing and sing "Jesus loves me." Thank God for parents like yours and mine. They make us into better parents/grandparents.
This is exactly how my grandma made them! She grew up on a farm in central Kentucky before the depression. During the depression they had steak (and mince) to spare but no cash: that was tobacco that went in one door and out the other to pay the gov't tax. Y'all just keepin' up tradition! Love your heart!
Just like mama used to make. Only difference, she dropped her’s by the spoonful into boiling broth. Both ways are delicious. Thanks again for another great video. You can do anything! 👍

This is just how my Grand mama use to make hers. We were raised the same way. My Grand mama was from Louisiana and my Pawpaw from East Texas and had 12 children and cooked real deal country food and I thank them for that because I learned from them. All these young folks love eating things like this but they don't want to learn how to cook it. They have gotten lazy with eating fast food not real country food. This is a REAL DEAL COUNTRY GIRL. Not fake just true to her heart and in today's world its refreshing to still see down to earth country people like you. Keep doing what you do because your the best on youtube yet to me!!

I remember eating chicken and dumplings in Tennessee when I was a young child. My aunt always made “cut”, not “dropped”, dumplings like these. I’ve been requesting the recipe for DECADES!!! No one makes them this way anymore!!! Thank you, thank you, THANK YOU!!!

Oh My! When you said you kids got the mince meat, parents got the steak, I dropped my coffee! I grew up in a farm also, and we kids got the mince, and adults got the steak!! I tell MY kids how lucky they are to get steak, because as a kid I didn't, but they thought I was makjng it up, until I showed them your video!
My grandma made the dough like you, but she would dry it out 24 hours before dropping it, and she called them noodles! I was thinking, if you add carrots, potatoes and peas, you'd have the beginning of chicken pot pie! Thank you again for the recipe, and entertaining video!

My grandmother...whom we called Mother also dried her dumplings! My Mom would occasionally dry her'...time was of essence with seven kids, my Dad and Grandfather!

I love watching you cook! It's like watching my great Aunt Ruby who taught me how to cook. Growing up in South Carolina we made everything from scratch. My great Uncle Jimmy showed me how to make homemade ice cream. My Mom taught me a lot too. She taught me how to make things stretch out and last because I'm 1 of 6 kids. It took a lot to feed us. You can guarantee we would have either a type of potato or beans for dinner along with cornbread and some type of greens. Usually greenbeans because Nanny and papa always gave to us from the garden do it depends on the season. 😊 They also have us chicken, deer meat, and pork they butchered themselves and raised and hunted. We always had a deep freezer for our meats and another one for veggies like corn and greenbeans. I was always drafted for the snapping of the greenbeans and shucking of the corn to freeze. Nanny Gault always canned things and have to us from that and taught me how to bake pies. Aunt Ruby taught me how to make cakes. I loved her peanutbutter cake she always made😊😋 my Mom taught me fried chicken, beans, cornbread, meatloaf, Spaghetti and many more. Nanny Gault showed me greenbean casserole and fried green tomatoes 😋😊 Yummy! I haven't had that in a while! I wonder if I can still remember how 🤔! Aunt Ruby showed me fried squash 😋 I better stop because it's making me hungry! Even though I was taught from a young age how to cook, I still went to school for Culinary Arts because I wanted to learn more. I learned the art of cooking 😁 ! I learned things I already knew but I learned things like hollandaise sauce and many more sauces like Alfredo. I also learned how to plate food and garnish them. I learned cake decorating and about fondant and molding chocolate and centerpieces and carving! I love the art part! 😉😊

Amen I came across her a week or so ago. My mom cooked just like Tammy. Its a comfort for me to renew things I forgot . My mom went to see the Lord thirty five years ago . She was sick for years and we cooked together often. We ate things just like this ! All home made from scratch. Corn bread , biscuits were served most every meal. The kids today don't know what they are missing. Family tables were worn out. God bless you and yours !

It's cold and wet here in So. Texas, and your chkn and dumplings came across my U tube feed. So that's what I'm making today. My mom and her sister made dumplings completely different. I'm 67 by the way, my mom made drop and my aunt made them like you do. I've taken to making them your way in last couple years. Only because I just can't make my drop dumplings taste like mammas. And Aunt Mildreds came close to tasting like mommas but rolled.
So have to say mamma, " it taste like yours but a different shape," LOL. I miss my momma, she didn't write any of her recipes down. Love your channel Tammy. It is like being with momma cooking by her side. Chris is a lucky guy. Ya'll

Born and raised on a dairy farm in the 50's. Newborn bull calves, best veal cutlets and calves liver and onions you ever had! I'm with you Tammy on eating from the farm; chickens, pigs, cows and calves. Best food and totally organic.
Been making it for 50 years. My grandmother made pastry dough and made dumplings from that. Very rich ... wonderful!

Tammy, since watching you I've gone back to buying bone-in chicken. I'd gotten lazy and started using boneless, skinless chicken instead. The flavor of bone-in chicken is worth all the trouble it takes to pull it off the bone, which is actually one of those meditative kitchen tasks I actually enjoy, Once you learn your way around a chicken, you can do it with your eyes closed.
By the way, I've been meaning to tell you how much I love your table. Years ago, I saw a desk someone had made out of a door that they had covered with leather. It was wonderful and I've always wanted one. And, you're right... chicken loves pepper. Dinner looks delicious! ~ Lisa
Hey Lisa!! So glad you got to see this one. Not sure how much a solid core door costs, but it is worth its weight in gold in my opinion!! I have used this door since I was about 19 years old. It could use a good sanding and staining, but I think it still looks great!
You can use 2 butter knives and do the same thing. And my mama said do exact measuring and wipe across the top with butter knife.. I never use cream of chicken I just add flour with milk and make it to thicken my chicken stock.
Thank you my mom was one of 13.. She had nice family stories. My friends were farmers. I didn't realize I was eating heart till they all laughed when I said "this is the best ham spread sandwich".
My Mom made dumplings that she dropped by spoonfuls and they were fluffy and airy when they are cooked. They were the best I ever ate. I miss her so much.
I grew up eating fluffy dumplings. We just drop biscuit dough in and then don't touch it. If you stir it up, they can fall apart too much.

We grew up eating drop dumplings. Similar to my momma’s noodle recipe
Once granny asked me and my cousin, Kevin (I was 6, he was 8 yo) if we’d help her paint her dining room for a pot of chicken and dumplins. We asked if we had to share, she said nope just for you two. Now Granny made a huge pot when she cooked them. They were our favorite! We were so excited and didn’t hesitate!
We didn’t realize we’d have to use toothbrushes to get into all the groves. She had tongue and grove slats on the entire walls…what a job that was. Took us all day but we got it done. It was the best chicken and dumplins ever! We did share them with Pawpaw and Granny though. 😆
Wow she's using a Foley Fork to blend the shortening and flour. The Foley Company stopped making those forks back in the 60's. They're collectors items now.
The pastry forks are so useful. A viewer sent me this one now I wouldn't be without one!

Jacob Hughes you're a good man. Your wife must have no interest in cooking, or she would figure it out. I learned to cook by watching Good Eats, but I got the desire from watching my Grannie as a child. My husband doesn't cook, but he takes care of the house and car.

You will do well. There are very many good cooks out there. I made my son learn and I'm glad I did. He's had two wives and numerous girl friends a d none of them can cook. I don't think they want to. His daughter at 7 got up in a chair to the cupboard and taught his second wife how to make a grilled cheese. Lol

It’s so comforting to listen and watch you cook. I love chicken and dumplings!! I make mine by sautéing chicken thighs cut up and making a roux with the fat from the chicken. I also use chicken bone broth I make at home with chicken carcasses and season as needed. The roux gives me a nice thickened broth.
I make my dumplings with water but I will try with milk next time. And I am with you on the frozen dumplings. 😊My friends say they’re so good but to me nope not the same and I like to know what’s in my food and avoid excess chemicals and sodium.

@@thatgirlthatsme I suppose that may be the case. But, I don't use much of the meat. I use the carcasses of three chickens I butcher at home. There's always some (minimal) meat left on the bones.
Slow cooking the bones for long periods (about 12 hrs or more) produces a gelatinous very flavorful broth with many health benefits. The first time I made soup with my bone broth, I could not believe the delicious intense chicken flavor. Needless to say, I've not bought any kind of broth from the store again.
Regular broth and stock are typically made with meaty bones and are cooked for a much shorter time (about 2-3 hours) and are also very flavorful.
I also make beef bone broth and again it's delicious for soups, stews, rice, etc.
I think it's a matter of preference and your own taste buds.🙂

Yes, I’ve got to have black pepper on all savory foods. It’s so hard to make things taste right if you season after the fact. I made homemade egg noodles tonight for chicken noodle soup, all from scratch. My husband made the soup, and I did the noodles. They came out really great, so next I have to make the dumplings like this. My nanny (maternal grandmother) made this sort of dumplings. She was born in Arkansas in 1902 and was an amazing cook that never measured anything!!

Oh, my goodness. Thank you so much for this recipe. First time making homemade dumplin's and I made them a little thick but all I heard from my family was slurping and hmmmm noises and them running for the kitchen for another bowl. That can of Cream Chicken soup is magical. No more store bought dumplin's for us. I did add more bullion than you and I added onion and celery but that's only because I had started cooking the chicken before I discovered I didn't have any dumplin's in the freezer. I really enjoyed watching this, but this is nothing like my mom's Chicken & dumplings. Her base was poured through a sieve to make sure all the bones, etc were removed, as the chicken cooled. Then she'd cook the veggies in that broth. She used lots of fresh carrots, peas & pearl onions. While the veggies cooked, the chicken cooled enough to pull apart & cut into pieces.
For dumplings, she made a batch of bisquick, & once the chicken, broth & veggies were done, she'd cover the top with dropped biscuits, put the lid on & they'd cook & rise in the hot broth & steam. She used the Revere ware pot shaped just like yours. To me - it was the perfect comfort food, & so flavorful. She might've used bouillon cube(s), & certainly used a couple bay leaves, salt & - like your MIL, never used pepper...I remember once, when I was in my teens & had eaten at other people's homes, I learned to appreciate pepper on some foods. So - once, when eating with my parents & brother, I reached for the pepper to add to something, & my dad asked where I'd learned to use pepper on my food. It was almost an accusation - a clear breach of how we do things around here, kinda thing. Wow. So I said - why not use it? There are a salt & pepper shaker placed on the table every time we've sat down to eat, my whole life. He had nothing to say...
When I make it next - hopefully soon, I'll not only add fresh cracked pepper, I'll add chopped garlic with the veggies, dried parsley, maybe a touch of thyme.& a few bay leaves, & a touch of sage - ground up in a mortar & pestle - probably with the peppercorns. I don't recall her thickening the broth, but maybe the drop biscuits thickened it some.
I sure loved her cooking. Everything was perfect & tasted the same each time. I only have my memories of her food, sadly. She never wrote them down nor told me how. In later years I did ask her for a few - over the phone, & took notes, but they're in with so many clipped & saved recipes, I'll have to make it a point to search through those boxes to find them.
Maybe this is why I treasure cooks like you, sharing your memories of cooking with your mom..I loved that comment about you making chicken & dumplings for your mom, & having her say the way you made this dish, is like how her mom did, using buttermilk instead of "sweet" milk.
That is a wonderful thing, I agree. And so many ladies miss it because they did not want to cook at a young age, or they were so busy they did not get the opportunity!
@@CollardValleyCooks Now too, for a few decades, so many grew up on fast food, & with their mom's having to work to make ends meet, who may have never learned to cook themselves. Many seem to be the 2nd or 3rd generation who didn't have a mom or dad who even knew how to cook, or having experienced home cooked meals.That can't be good for their development - physically or emotionally.
In my grammar school & high school, we had good foods there too. By the time my daughter was in school, things had changed. Foods like cheap pizzas came in frozen & were heated in a microwave. In her high school, she'd told me they'd often served under cooked chicken nuggets. For so many, this may be their only meal in a day.
So, thanks again for doing what you do! Now people can learn to cook by watching TH-cam! I'm looking forward to learning a few new recipes from you
I live in Rockmart and recently stumbled on to your channel. Your chicken and dumplings look delicious!!! I make them from time to time myself. My wife is from Montana and had never had them before so over the years (decades...we've been married over thirty eight years) this has become a cold weather comfort food for us. To make them go further, and make it a more complete meal, I like to boil some cubed potatoes, drain them, then stir them in just before serving. I remember my grandmother making them this way . Thanks for the great videos! You make it seem like I'm sitting on a stool in your kitchen!

After living there for over 20 years I left Georgia 18 years ago. When I get homesick for I listen to one of you videos where you are cooking country staples like these dumplings. You remind me of the main reason I miss Georgia folks and I feel so warm inside. Due to physical restrictions moving back is not in the future but, with your videos I'm there. She never had a recipe, she just went in the kitchen & cooked them up!
All my life I have tried & tried to duplicate her recipe. I kept a notebook of all the
Recipes I tried. Nothing tasted like hers😢 It was a lifelong pursuit.
Then, after looking at probably every rolled dumpling video on Y T, I found this video.
She always used ice water to make her dumplings so that is what I used with your recipe & BINGO!
Also I used all thighs because I think they have the best flavor.
I did it, I made chicken & dumplings just like my grandmothers!
My grandson requested them for his 20th BD dinner this Tues.
I went back to this video to review before cooking the birthday dinner.
I hadn’t made them in a while. I have your recipe written out, but
just needed to watch you make them again.

I used a rotisserie chicken for this recipe as the price was the same as a raw one. I put the carcass and skin in the kettle and covered with water to simmer for the 1 1/2 hour. My husband loves it! I have been searching 12 years for an easy recipe for chicken and dumplings that he likes. I totally agree that store bought raw biscuits can not compare when used for dumplings. My mom is an Okie and my daddy from Mexico. They met at a lemon packing house in Ca. Moms fam kinda poor. Dads fam also poor. Moms fam the only American fam in the Mexican neighborhood. She taught them country food dishes and they taught her Mexican food so she could feed her hubby "properly" :) She taught them English and they taught her Spanish. Moms side taught me how to bake pies, biscuits, breads and traditional american foods. Dads fam taught me all the Mexican cuisine. Best of both worlds! I look like daddy (brown) and so when I bring some hm made biscuits or cream pies or yams moms way, and cobblers everyone is shocked. Haha My great aunties (Willie and Edna did dumplins. Im originally from va but my late husband was from morehead nc from the coast,my mom made fluffy dumplins,i had to learn a whole new way of cooking,they eat what we call dumplins,pastry which is made with plain flour no leavening and water or broth with salt some used shortening and some didnt,i gues its poor mans dumplin?.this is the way we do pastry or dumplins here in eastern nc,orthe way his family does.merry christmas🎄☃️❄️🤭

This recipe is LOTS like the dumplins my Mamma used to make. But, she used to use only a little shortening or leftover grease from frying chicken or pork chops - if there was ever any leftover after making gravy from it. Then, she would use only a little milk and mostly water in the dough. Sometimes she used the broth from boiling the chicken, too. She would roll out small portions of the dough at a time, having them be a little thicker than here - even though she also used the SR flour. She would take them straight from cutting them to the boiling "water" and "dump" them one - by - one into the water. We loved our dumplins thick and creamy. The flour on the dough and whatever fell off her hands made the gravy part thick. Your recipe sounds delicious with the soup and chicken bouillon in it. My husband never had them until I first made th eff m for him. Now, he loves them !!! But, he puts other seasonings such as garlic salt in his - those are quite tasty, too. TY for sharing this recipe with us cause it brought back sooo many wonderful memories of my childhood. 😻

I just watched about 6 videos about making chicken and dumplings and you're the only one who makes them like my mother taught me. This sage and parsley and onions, celery and carrots, and all the other herbs that put in it is just gross. It's chicken and dumplings NOT chicken stew and dumplings. One cook titled hers OLD FASHIONED CHICKEN AND DUMPLINGS and added all kinds of spices and herbs then made them with Bisquick and cooked them in a pressure cooker. How is that OLD FASHIONED. When my grandmother and great-grandmother them they sure didn't use Bisquick or a pressure cooker. Keep up the good work Tammy.
Trish Roberts I was thinking the same thing when I watched different ones,I make a lot I usually have to make two pots of chicken an dumplings when I make them cause every one wants some😂but I boil just boneless chicken breast just because I don’t like dark meat then I divide my broth to the two pots from cooking my chicken then I add Swanson chicken broth to both pots until it’s about half way full or a lil less.I then cut up my chicken an add it to both pots. An turn it on low or simmer while I make dumplings ,so after dumplings are ready I turn up the heat cause it should be boiling an I add my dumplings I season with salt an pepper .
I make potato salad an pan of cornbread I usually make jiffy my kids like it sweet an I make regular ,before I start my chicken an dumplings .
The veggies and herbs are nutritious.
@@nancyalywahby2784 herbs have very little nutrition, and once youve boiled the veg, all their nutrients are in the broth.
My grandma used to use Crisco with her pie crust. When she made pan dumplings though they were made with eggs, a splash of cooking oil, flour and a small amount of warm water. She also would add a half stick of butter to her broth. They were rolled out the same way and dropped into the pan of boiling broth. And then seasoned with salt and pepper.

My mother didn't, but I do the cream of chicken or mushroom, too. I had to once because I didn't have enough broth, so I added a can of soup and a couple cans of water- and prayed! I add it to chicken and noodles, too. And cornbread with my chicken and dumplings, a childhood thing!

Knorr also has condensed beef and chicken broth, it’s awesome, I bet it would work perfectly without the cream of chicken soup, after tasting it, if you didn’t care for it, you could then add the soup. I made them once with cream of chicken soup, I didn’t personally care for it, but everyone else thought they were just fine. We love dumplings so much that
we don’t even care if we have the chicken, and I’ve eaten a bowl of leftovers right out of the refrigerator not caring at all if they’re cold. Once I asked my granddaughter if she’d like to have chicken and dumplings and she asked why she’d want a wet biscuit.......😐

was born on a farm in KY. learned to cook as a small child, but later in life was in cities worked with a child, not enough time to cook made a quick way for chicken and dumplings ( in a pinch ) buy large pkg chicken take 4 pieces and fry them put the other 4 pieces in a pot with seasonings eat fr. chicken 1 meal 2 days later put the pot of chicken back on stove when it is hot cut flour tortillias NO SUGAR in tortillas (if you use ones with sugar they will suck) in strips drop in using a spoon to dunk each one to keep them from sticking together cook for 20 min. easy enjoy
Hello, you just got a new subscriber here. You make your dumplings the same way as my great ma-maw, ma-maw, and my mom made them. I was never able to make decent dumplings that way, mine always turn out really chewy and gummy like gummy bears and I don't like a chewy dumpling. So I make drop dumplings and they're nice and fluffy in the inside.
I've watched a lot of videos on how to make dumplings and the one thing that I was taught to do that I've never seen anyone else do is add milk to the broth. It makes a nice rich creamy gravy like consistency to the dumplings. I also add poultry seasoning to the flour before I add the milk and mix it up. It gives a nice chicken flavor to the dumpling itself.
I too was raised on a farm where everything we ate came from the farm. The only thing we ever bought from a grocery store was just stuff that we couldn't make or produce in the farm. I was 8 years old before I ever saw the inside of a grocery store and I was amazed that you could actually buy meat, veggies, jams, jellies, canned fruit and stuff like that without raising it yourself and canning or salt curing or smoked. We even raised our own grains and my dad would take it to the mill after harvest to have it ground into flour, and some of the field corn would be taken to the mill and ground into cornmeal. We didn't buy anything in the way of food, nothing!
By the time I was in my teens I couldn't wait to get off the farm, by the time I was in my 40's I was wishing that I was back on the farm. Life was hard at times, but it was a good life and we had a lot of fun. Now at 62 I'd give anything to be setting on the front porch of the old farm house and watching the sun set over the pastures instead of this crappy apartment.
I love your door, I wish I had a work area that big in my kitchen. There are people that have closets bigger than my kitchen. Seriously my kitchen is, seriously, my kitchen is 8 ft. 10 inches long and 6 ft. 1 inch wide.

Thank you Ma'am! I do have a request actually, and I've asked numerous others about this and I've researched it to the blue blazes and I can't find it. My mom use to make a dish for us kids for breakfast that her mom made for her and she called it egg butter. I know it has water, eggs, and sugar in it and I'm not sure about anything else. I know mom dissolved the sugar in the water in a frying pan on the stove and then added the beaten eggs and cooked it till it was done. I don't know if she added anything else and I don't know the amounts of sugar, water, and eggs she used. That stuff was awesome on hot buttered biscuits, and she always made extra cause it was good cold out of the fridge between two slices of bread for lunch. If you know how to make this please let me know, I'd be forever in your debt. =)

Walmart sells chlor tabs 100 for about 3.00 or you can also get 1,000 of these on Amazon for 9.99 to 10.99 a bottle. The brand is Major. They are 4mg. but I take 2 and it lasts 12 or more hours. I've been using these for about 20 years now. They work great. Hope this helps. 😊
I just had cracker barrells dumplings today. They were good but nothing like my gma and aunt s were. I miss thier dumplings. Mine are good but not the same. I use to watch my gma make them and she never used milk or self rising flour and im pretty sure she didnt had baking powder either. Yours look good i want to try it that way. But what i dont want is the biscuit type like i had today. I taste that baking powder and i dont want that. I had an extra side of dumplings and it was all clumped together later when i heated them up. Gma and my aunt rarely had left overs but when there was and i heated them up later there were not clumped together in the bowl. They were still seperate flat squares. Yummmy. They were soft silky smooth flat dumplings. The best!!

Tammy, many people make dumplings that are more like a noodle. I like both worlds and I make mine like mama did. They are a little fluffy and flat too! You will love them if you give them a try!

Honey I agree with the boiling the chicken. I always boil chicken and make me some broth for my dressing and my gravy. Thank you for this recipe. I love chicken and dumplings but I like a certain dumpling that I cannot make. I like them a little doughy in the middle. I hate a soggy dumpling. I did master the fluffy kind and I love them. Never had dumpling like this. Only ever had ones made with all purpose flour and either proper butter or suet then drop golf ball sized balls into your soup or gravy. If in gravy I cook in the oven so they raise well and have a fluffy middle and a crispy top. I do always cook chicken on the bone. As you say it adds so much more flavour. I wish I had a large table to do prep on like you do. Also a large pantry cupboard but my kitchen is much smaller than yours which seems to be the trend in the UK. Shame really but most women work full time to pay the bills but cooking proper home cooked food is a by gone thing. My younger friends have no idea how to cook real food. If it comes out a box tin or freezer it will do. Shame isn't it to lose your mother's and grandmothers cooking skills. Is lovely to see you actually get your hands stuck in and turn out a real meal.. thanks for sharing.
It really is a shame, but there are still some of us out there, and that is why I started this page. I know that even if some didn't grow up in the kitchen, they may have a desire to cook again. There were many years that I didn't have a large kitchen and pantry and cooking was still fun! I am so glad you are watching. Mama made peas with dumplings, or peas with thickening some called it, (it had the gravy like is in the chicken & dumplings, just substitute canned sweet peas for chicken- the canned pea liquid, thickened with flour and boiled gently for a few minutes to cook the raw flour taste away), add black pepper to taste of course. There were times we couldn’t afford a chicken, but Mama made home cooked meals that was full of great taste and comfort, by using what we had there on hand. We never felt poor by what she feed us, we felt like royalty. It’s 3:15 a.m. so hard to remember the recipe at the moment. Now, I’m craving peas with dumplings, as well as chicken dumplings. Goodness gracious. :) ♥️🙏🏼

What a great video. Love the dumpling recipe. You cook the same way Granny did. I learned from her. You mentioned the mixer you didn't like. I have one that was made probably in the 20' maybe 30's. It's wire instead of flat slots like yours and it works great. I can't find one like it now days. You talked also about dressing. Granny would make her's with the liver from the turkey or chicken livers. It was actually really good. I grew up on a farm here in Missouri. Dad butchered our beef. Just like you He got the T-bone steaks. We got the lesser cuts. We would maybe get a T-bone right after he butchered. The rest were his. It' great to hear your southern accent. I miss it.

We always made homemade noodles with beef and dumplings with chicken. We always made the noodles the day before and would not think of using the noodles until they "cured" overnight. We had a screened cupboard to hold pies, breads, noodles and all baked goods. Loved coming home from school and seeing noodles drying on the table. We were eating good the next day!

I am so glad I seen this video of you making the dumplings I have been wanting to learn how to make those my mother used to make them and I used to watch but I forgot and that's been years ago that I work for this lady one day to help her out in our home and she made some she made them exactly like you but she used the yellow of an egg and put in them to make them look like noodles when they were through cooking and they taste delicious because they look just like a egg noodle but they were dumplings so thank you for sharing how to make them I will never forget now just saying

I made biscuits with chicken and dumplin's. When my son was 2 1/2, I made them at Christmas and used my mom's old cookie cutters. We had stars, hearts, etc. From then on, he called them wonder star biscuits. (From twinkle, twinkle little star, how I wonder what you are.😁
First of all I love your door work table. That's the best kind. You make flat dumplings like my mom used to make them. First by cooking a whole chicken that mom cut up into pieces for an hour - or so. Then for the dumplings she too used whole milk. She never added any soup. She would make a little roux with flour and water and added it to thicken the broth because she never used any excess flour on her dumplings before she added them the broth. But yes, she made sure the broth was rolling before she added the dumplings and then she covered them for ten minutes. Then she would add evaporated milk to make the broth nice and rich. To complete the dumplings she added a few drops of yellow food coloring, which made them all the more appealing. Mom didn't debone her chicken and add it back into the pot. She served it separately with the dinner. But I definitely will be incorporating some of your techniques along with mom's the next time I make flat dumplings, which won't be long. If you grew up eating poor folk food like you mentioned - and I did, as there were eight of us - homemade soup, chili and chicken and dumplings, you were eating well!

I just Love the way you talk! I lived in Kentucky for half of my life and people in Virginia always comment on my accent! They say "say that again"! Lol
My parents used to by a half or quarter beef from my grandparents or someone else; as far as the steaks, Mom always fixed round steak browned and baked on low in the oven and would make gravy (I'm hungry thinking about it). I remember one time my gramma made round steak and after making the gravy she pored in over the steak, not on the side like mom did. Also I remember eating Sunday dinner at my gramma's and she would have two meats, like fried chicken and baked steak.
My mother made dumplings just like you. She rolled her dough out and cut them and that's the way I make them. She made hers with milk and with broth I liked them however she made them
I make my biscuits and dumplings like your Granny with the well in the flour, add shortening and mix by hand while adding milk. It's so easy.
