    I have made jerky for my family. It is surprising how 1/2 inch cut against the grain strips of meat can shrink in a dehydrator! We put soy sauce, a little brown sugar, and cajun spice mix on ours before it goes in the dehydrator. I hope Azib Ali has luck with making some.

      I make jerky too but I don't use soy sauce since I don't like it. I use only three liquid ingredients and nothing else for the regular jerky but I've experimented with wasabi, hot wing sauce and BBQ sauce.

    Hopefully Azib Ali gets the info that to make good beef jerky, the cut of meat has to be very lean, little fat.

    • @toomanyaccounts
      @toomanyaccounts 3 ปีที่แล้ว

      the excess fat has to be cut off. filet mignon wouldn't make good beef jerky since it would be dried up too much and be like shoe leather. so there has to be some fat inherent in the meat to be smoked or dehydrated out.

    I make my own beef jerky. I slice the meat a quarter of an inch (.64 cm) thick, marinate for 12 hours then put it on a dehydrator for about 5 hours. It can be dried in an oven too but an oven's lowest temperature is still warmer than a dehydrator.
    The dehydrator actually cooks the meat but at a very low temperature.

    "meat candy"
    Well, yeah, I guess... ;)
    Actually just preserved / dried meat that can be stored long-term and eaten anywhere any time. Typically pretty tough, rubbery, hard to chew, though it depends a bit on remaining moisture content, I guess...

    • @toomanyaccounts
      @toomanyaccounts 3 ปีที่แล้ว

      fresh made is a lot tender. also putting in the mouth for a minute or two to moisten makes it easier to chew.

  • @toomanyaccounts
    @toomanyaccounts 3 ปีที่แล้ว +5

    Ah had to look this brand up. It isn't the one in the thumbnail. This is a local one made in Pakistan so it is halal.
    Jerky gets its name from another language in which it is known as Ch'arki which means "dried, salted meat".
    Jerky for a long time was pretty much only known in the Americas where it was a staple of pioneers and as a snack food.
    Since Jerky could if made fresh last for a week or two it was important in rural areas. if salted Beef Jerky could last for months.
    Have to be careful with the jerky made to last a year since it is tough. so you want to moisten it in your mouth for a bit, before chewing.

    Europeans colonizing America learned to make jerky from the Native Indigenous Peoples there.
    Meat was marinated and then all the moisture removed by slow smoking.
    Now in modern America, it is popular as a food which requires no refrigeration, by hikers, hunters and those setting aside supplies for natural emergencies, like Hurricanes which cause loss of electricity.

    Jerky is what the tribal people of America made before any Europeans came here. Now we have refrigerators and freezers to keep meat good for a long time, but they had only smoking meat & drying it out bone dry to make it last safely for a long time. The other thing they did was make something called pemmican which was pounding jerky with dried berries and animal fat to make it last a long time.

Although it is prepared like you would do a vegetable it is a fruit that grows on a vine. Not sure if it is available where you live but seems to be imported into Pakistan when I looked online. The soup made from it is very popular as a family meal.
